Repurposing cooked broccoli - this is a challenge!

A year later and I've got this issue, but my broccoli doesn't taste so good...

I can wait 9 days until my conscience allows me to throw it out, or try and fix it up.

Broccoli, tossed with olive oil, s&p and roasted to a nice crisp. It just tastes lousy.

I may do the cavatelli route, but I also have some mascarpone to use up. Blah to soup. Pesto? That could work...

Vegan Cream Cheese

Galay Nutrition rice-based American slices are a favorite around here, my toddler loves them. Which means nothing, he also likes chewing on the dog's tail. But he also loved that cream cheeze... On toast, with jelly.
I tried the Daiya shreds, amazing in Mac-n-Cheeze sauce, not so good on grilled cheeze. very slippery.

It's not traditional from my part of the boot- I think it's Sicilian- it's a heavy, dense, ricotta pie with wheat berries, citron, a gazillion eggs, killer crust (no short cuts on the crust, people!!) - my gorgeous sister made it from her wife's recipe (handed down from her wife's mother)

I love it 'cuz it's not sicky sweet. And the wheat berries are fun!

Tort Salad- I use frozen cheese tortellini, cooked al dente and dressed quick with minced garlic, crushed red pepper, salt, diced roasted red bell peppers, salt, olive oil- then chill it. Later add diced hard cheese, hard cold cuts (don't go too crazy on the meats) and for crunch sometimes bits of celery.. It needs salt.
I make an oil and vinegar dressing and toss in a handful of romano...

It's a pre-Easter Sunday dinna here in Flora-duh... This is small and unusual for us but with a 16 week old, Momma is exhausted. Lately, you are lucky there's food and I remember to wear pants.

How should I use my MILK chocolate chips? Not for CCCs.

Melt them down and coat pretzels/pretzel rods, roll in crushed nuts or sprinkles, or just leave naked- let harden on parchment.
I get lazy so I use the pretzel rods (faster!) - I've done this many times. Now I want some!

Not sure- but someone may know if they work in those Magic Cookie Bars?

Throw it in a big roasting pan and "bake" it a while- to me it gives the tomato sauce intense flavor. And it's always thick...

Yesterday I ate one half of this delicious eggplant parm sandwich... The bread was perfect- chewy on the outside, not crumbly or too soft and the eggplant was thin and light, plenty of gorgeous mozzarella oozing out, it was all I could do not to eat the other half. I ate every bite, even all the bread because it was SO GOOD (she said the bread is flown in from NYC) and I don't normally EVER let myself eat all the bread. The flavors were amazing. It was a thing of love. I hugged the deli owner.

So on the way home, my husband called-stuck at work and starving... I brought him the rest. I told him all about it, that it was magical, that it would taste so good he would want to smack himself. I kissed him goodbye, and gave one long last look at the EPP... When I called him later I asked about the sandwich first thing- and I get 'It was alright... bread was too chewy."

I MOURNED the loss of that sandwich for the rest of yesterday and all of this morning. He knew I was in lust with it, that I gave it to him because I love him so much I could know no greater joy at that moment than sharing such perfect sandwich-ness with my amazing husband. Our relationship would be even stronger, once I was able to share this food with him...

And he crapped all over it.

But I'll still share, usually the results are much more fulfilling...

Crack Pie Recipe

My boss (who calls me a Yankee) loves his Chess Pie.
I was frantic the night before his birthday last week- couldn't find the exact chess pie recipe I'd made before that he loved, so I used my iphone epicurious app and found a lemony version (actually I was supposed to use the zest of an orange and a lemon but I didn't have an orange so I used only lemon) - well, people freaked out over this pie...
It was a stick of butter, egg yolks (4 I think) - a cup of sugar, the zest, the lemon juice (I never measure) I baked it in a Publix brand pie crust!! They were genuflecting as they passed me in the hall.
I'm going to try it in a cookie crust next time... I can't eat it- way too sweet for me (I don't tolerate sugar) but it's too easy not to make, even for a confirmed 'non-baker but loves her sweets' girl like me...

I can't get enough cookies, lately I'm sad when I venture into new cookie-land. I like a fat, busy cookie and I like it to not fall apart as I nibble.
I'm really in love with macadamia nut but hate the taste of "white chocolate" - I call it 'mock-late' ala the Friends episode when Monica had to cook with that stuff.
There are a few sticks of butter getting soft on my counter tomorrow AM for me to bake, it's been so hot here but if I start early I can be done before the sun comes up!

Don't get fooled into buying the Snapea Crisps and think they are the same- they are NOT. I was so disgruntled I threw a hissy in my cubicle...

Tried it once-didn't want to deal with it ever again. I must be lucky- never a leak, never uncooked either- but the top DOES get brown (as do the sides-which I find tasty) and yeah, sure it cracks but that doesn't slow us down a bit...

Planters Flavor Grove Almonds

I think it's a fluke- a Chili Lime almond that doesn't taste like paint thinner and hate? I grabbed a bag and did not heed the suggested serving size. I'm afraid to buy another one and realize that it was just a one and done. They will find some way to ruin them, especially if I profess my love for them (look what happened to my Lady Stella cookies)

Best barbeque sauce out of a bottle?

I picked up a huge jug of it at Big Lots ($2.50) - my husband asked me to pick up more but I haven't been back yet to see if they have any left.

I don't really care for it myself but he loves it. I do like the Sweet Baby Ray's, and I picked up the new A-1 with Lea & Perrins in it. Actually I can't think if it's A-1 or not- but I had a coupon... Will report back once we get to it. It came with a free brush which my husband liked for the no-nag clause that comes with it. (I'm really particular about the cleaning ritual of MY basting brush...)

In the 17 years I lived in Sonoma County I don't remember seeing this, ever...
I don't care for loose corn, and if I have to eat cob corn I slice it off (such a contradiction. this is true..) and I like real butter, s&p.

Tiramisu

Funny + True: It was my birthday at some little resto -my boyfriend ordered tiramisu for dessert and they of course stuck a candle in it. But they didn't go "light" on the cocoa.... When I blew that candle out, it was like a dust storm over our table!!

Do you happen to own a mini-muffin tin?
Grab the brie, the muffin tin, a can-o-crescent rolls, and some hoity-toity-fruit preserve of your choosing (I chose FIG)
You know what to do; arrange the dough to fit neatly inside the (fully greased) muffin tin, plop in a chunk of cut brie into each one, top with a tsp or so of preserves... bake until golden....
It's not fancy, but my "I don't like brie" husband inhaled them.

No more dark toast?

We are toasty-toasted toast people. I hate limpness in the morning... (any time of day, really)
I recently had to endure a morning meal at Perkins, and was faced with yuck-toast. My server had no problem asking the cook for another order of rye- "well done" - it came out perfect.... after our meal ended!
