Terrapin in Rhinebeck and Bear Cafe in Bearsville (Woodstock)

Agreed. I've ended up there several times due to it's location (right across the street from the wonderful Upstate Films) and I've never had a good meal there. I much prefer Gigi's across the street.

Wedding cupcake tower advice

A chocolate frosting with cinnamon is very nice. I love to garnish cakes and cupcakes with edible flowers. Nastersiums would be nice and fit in with the color scheme of the wedding.

I second the Chickpea Cutlets! A+! They are great. I prefer the texture of them when baked. Also hits at my house:
Snobby Joes
Porcini Wild Rice Soup
French Lentil Soup with Tarragon and Thyme
Homemade Vegtable Stock--I think it's the parsnips that to it
Seitanic Red and White Bean Jambalaya-- tastey, homey and makes enough to feed an army

One of the things I like best about Isa and Terry's books is that they don't rely too much on tofu or premade soy products. They appear occasionally, but many of their recipes are based on whole unprocessed ingredients (grains, beans, nuts, and so forth). I've nothing against tofu or soy products, but they can be over represented in vegan cookbooks.

Chickpea Cutlets

I have Isa's book Vegamonicon and I have made this recipe from it many times. It is fantastic! I sometimes make a big batch on the weekend use them for brown bag sandwiches through out the week. Great with mustard, lettuce and tomato on a hard roll. I don't pan fry, but bake the cutlets brushed with a bit of olive oil. I prefer the texture of the baked. So good!!!
