Most Overrated Dishes
Your friend has it almost right. Lobster bisque is pureed. So there's meat in it, but not chunks. But it should taste like lobster, not caramel. Lobster soup or stock is made with the shells only, no meat. And lobster stew or chowder, should have big chunks of meat.
Fish 101
My favourite way of preparing fish, because it is so simple, is in my 2-sided electric grill. It's like the George Foreman grill, but mine is a B&D. It only takes a few minutes, and there's no pre-preparation - if you've bought the fish already in steaks or fillets, just put it on. Then you can top it with whatever kind of sauce you like. I love salsa, and fruit salsa is even better.

lobster Tomalley is to be blamed for too saltiness?
Most people (myself included) salt the water before boiling or steaming lobster. If you re-used that water, that could cause the saltiness. I find tomalley to be the least salt-tasting part of the lobster, so I would be surprised if that was the cause. What was the size of the lobster? Perhaps there was too much lobster & shell as compared to the other ingredients? Did you try putting a raw potato in - my mother always swore by this when she over-salted things.

In PEI, if you're there in the summer, you absolutely must try a proper church lobster supper. They're advertised all over the side of the highway.
New England Style Hot Dog Buns
These are real New England hot dog buns. The previous picture might be a close-enough approximation if you have no other alternative, but they just wouldn't do for someone from the area - they're too thick, which would make the lobster roll too bready.
