Cooking bacon in the oven... why the hype?

I do like to oven bake on occasion if only because it allows some seasoning elements for bacon. I have tried a few variations- my favorite to date is a light dusting of brown sugar and some ground chile. A great sweet-spicy bacon that is stellar on a BLT variation or crumbled into a salad.

BBQ in Bradford

Big Bone definitely going to be the best you find in the area. There are some decent Portuguese Chicken places in the area and the restaurant called Mexicanada is usually pretty good and has had some decent reviews on here.

Diners Drive-ins and Dives North of GTA

Mexicanada typically a good bet but as it has gotten more popular the service and food has declined. Weekends see large groups in there more for strong margaritas then food. That being said a good margarita is always worth a trip.

Sauce for Prosciutto Wrapped Pork Tenderloin??

I was planning on serving local baby carrots in a white wine/honey/nutmeg glaze and a burratta/arugula salad. I like the idea of citrus to cut the fat. What about something along the lines of a salsa verde? Do you think that would overpower it?

Sauce for Prosciutto Wrapped Pork Tenderloin??

Im making a smoked prosciutto wrapped pork tenderloin for dinner tomorrow night and am looking for a sauce to go with it. Everything I have seen recipe wise has asked suggested an apple based sauce.

Given that it is spring I am looking for something a little fresher, more acidic to cut through the fat of the pork.

Any suggestions are welcome!
