Restaurant sedarim
Prime KO would be my guess as well. I've been to Prime Grill for sedarim, and it was a nice experience, so the restaurant management group seems to know what it's doing vis-a-vis arranging for turning a restaurant over into kosher for passover and arranging for a nice holiday experience.

i'm not sure there are any restaurants that are strictly bet yosef. if you're looking for raw meat, you can go to Prime Cut, Avi Glatt, Kings Highway Glatt...
Sushi
Sushi is a clump of rice, a little wasabi, and a piece of raw fish on the outside. the rolls we are used to are referred to as "inside out rolls" by sushi-purists. I think, according to Rav Moshe Feinstein zt"l, it's best to make separate berachot on the fish and the rice.

Prime grill is open every year pesach. sister restaurants solo and prime ko will probably be open this year as well. les marais turns kosher for pesach, and I think wolf and lamb does too.

best rule of thumb re: cooking with wine? never cook with a wine you wouldn't drink.

try using them in a "dirty rice" or a jambalaya - or, try a savory bread dressing with the sausage

Solo, at 55th and Madison avenue (in the Sony atrium) has really high quality Kosher food. Prime KO, on the Upper West Side, is a great Japanese kosher restaurant, with fresh sushi, interesting entrees, and a really fun ambience.

Never thought I needed a fish spatula. my husband brought me one and it's rarely out of my hands when I cook. I swear by it. Same goes for my box grater.
Busy parent Meals
defrosted meat, chicken, fish really don't take very long to cook - try dumping salsa or duck sauce or some other prepared sauce over a protein and stick in the oven. macaroni is also a magical ingredient - one night's side dish of mac is tomorrow night's main with some chicken bits thrown in.
Prime Ko's Gyu Kakuni
Had it - i'm normally a fish fan, but this dish called out to me (i'm a sucker for just about anything with mushrooms and potatoes). the meat was super soft - like, cut with a fork, melt in your mouth, are you sure this isn't butter - soft. really good dish, totally worth forgoing my usual sea bass or salmon choice.

My grandmothers - Bubbes - had completely different approaches to cooking, but taught me everything I need to know about food. For them, meals - all meals - were meant to be special experiences enjoyed with family and friends. Whether it was latkes wrapped in paper towels, apple cake on a fall night, or Sunday brunch with lox and pumpernickel bread, food time was family time was experience time. From them I learned to make every meal with the family a memorable experience, something to enjoy, savor, and relish. This is true for pizza night, chinese takeout, beef stew on a cold winter night, or bbq in the summer heat.
