Why do pumpkin muffins use oil?

Well, it's that time of year again -- the canned pumpkins are blossoming on the trees around us, and pumpkin muffins are everywhere. I just have a simple question: why do pumpkin muffin recipes almost always use oil instead of butter? Is it because the pumpkin puree would weigh down a cakier, butter-based recipe? But if that's true, then why does the yogurt used along with butter in many muffin recipes not weigh them down?

Lately I've been hearing a lot about the comparative health risks of organic and synthetic pesticides -- organics can be more harmful, etc. I'm looking for sites and/or books and/or journals where I can read up on the comparative health risks of both. Where can I find reliable information?

What defines a 'black' walnut versus a green one?

I've been looking up several recipes for pickling walnuts, like this one http://recipes.epicurean.com/recipe/1... , and all of them say to use either (depending on the recipe) "green" or "black" walnuts. Which is the kind I would find in a store like Whole Foods labeled generically as "walnuts"? Or is it just a difference in how ripe they are?

What makes tomato and basil non-refrigerator foods?

I think the title says it all; what exactly is it in tomato and basil that make them best at room temperature rather than in the fridge? And are there any other common foods for which we should follow that rule?
