Spatchcocked Turkey for T-giving--can I roast this on top of a bed of carrots and celery?
I've done this a couple of times, and the stuffing is the Best Ever. However, since the stuffing absorbs the drippings we would normally use for gravy, this year I am going to put the stuffing on a wire mesh rack, and hope to create a resevoir to catch at least enougth grease to make the gravy. I don't know if it will work or not, but will give it a try.
The turkey also cooks quickly this way. You really don't have to worry about the turkey and stuffing cooking at different temperatures, since they are both quite forgiving.
Is creamed chipped beef only liked by the people who were or are currently in the military?
Ditto here! I grew up in central PA, but my mother was from Chester County of English Quaker descent, and made a delicious Dried Beef with Gravy. She had the salty dried beef freshly sliced paper thin from the local CloverFarm store. And, fried Ripe tomatoes were a summer treat, when garden was so full of tomatoes you couldn't possibly eat another slice of fresh tomatoes. Just sprinkle some herbs and flour on the tomato slices, brown lightly on both sides, and save one or two slices to smash up with a little milk to make a gravy.
Anything Good in or Near Warsaw Airport?
If you don't have much time and don't want the hassle of leaving the airport, the Sami Swoi - Restauracje Krawczyk cafeteria is serviceable and right in the duty free mall area. The open seating is well situated for people watching. For desert, the staff at one of the duty free stores can direct you to the best Polish chocolate. The traditional brand we bought was deliciously dark, rich and uill of fruity bits; unfortunately, I forget thename.
One night in Milan-- what restaurant will give us a flavor of the region?
We had a similar one night stand in Milan a few weeks ago, and had a wonderful meal at L'Osteria Del Treno. Very local, great staff - it would fit your bill perfectly. And it is just a short stroll from the train station. Evening service starts at eight, and it filled up instantly. I'm not sure about the reservation situation or what days they are closed; it may be good to call ahead.

Thanks for this great list - I'm certainly keeping it for reference. I was glad to see you mention L"Aromat - we had a lovely meal there a couple of years ago. Good food, good service, a young and energetic staff. Your post lead me to look at their web site, and I was delighted to see that they post a recipe of the month!
Worst kitchen screwup.
1961, 7th grade home ec - cooking semester: assignment was to make something at home that we had made in class, and our family would comment. I decided on hot cocoa from scratch. My brother diplomatically wrote that it would have been really, really good - if I had used sugar instead of salt!
Have you had foods flown in to satisfy a craving?
That happened to me in Milwaukee a year or so ago. When I went through screening, the TSA staff asked me, "do you have Wisconsin sausage and cheese in your carry on?" I affirmed that I did, but she had to check with her wooden sticks anyway.

Roman rotted fish sauce
We recently took a one day cooking class in Provence with a chef who is an expert on traditional Provencal and Roman recipes. We made a wonderful roast chicken dish that was slathered with a sauce made with honey, mustard, milled spices - and Thai fish sauce! Talk about stinky fermented anchovies...and a rich, deep, flavorful sauce!
Anyone canning food from your own garden?
Roasted tomato sauce is the only success this year - I have frozen approximately a dozen pints, which will add a little bit of sunshine to our mid-winter meals. Other things have not done so well this year - eggplants are definitely down, and there are not enough peppers and onions for relish. The last project will be the pickled green martini tomatoes.
New fun experiments this year are peanuts and loofah - now I have to figure out how and when to harvest.
Where to eat in Aix?
We had a very nice meal a week or so ago at Le Bistro Latin, 18 rue de la Couronne. Meals were about 25 euros for entree-main-dessert, the wines reasonable, and the staff was friendly and gracious.
Cape Town: My Current Favourites
We check this board periodically to vicariously relive our visit to Cape Town last year, and I wish we had had this list - it appears to list the sort of down-to-earth places we gravitate to. I had printed out lots of ideas for high end places that we didn't get even close to; after each full and wonderful day of exploring, we returned to eat in the Observatory suburb, where our son was living while he studied at UCT. Every evening we met him at Obz Cafe, then, after a drink,we either ate there or elsewhere. So for you academics out there who may be on a budget, the meals we had in this part of town were very reasonable in price, ranged from ok to very good, and vibe was diverse, artsy, and studenty. The highlight was our meal at Cafe Ganesh.
