Cuisines low in glutamate/umami?
I'm cutting back on foods high in msg in all forms, as well as free glutamate that occurs naturally (like in long-simmered tomato sauce, aged Parmesan cheese, soy sauce, etc. -- the taste sometimes described as "umami"). In other words, cutting back on lots of amazingly delicious foods! Turns out they trigger migraines for me, so it seemed like a good call.
My question: I'd love to identify cultures/cuisines that are naturally *low* in high-glutamate ingredients. It would be great to eat/cook delicious, authentic food that is headache-free. Any ideas or recommendations would be great!

It's small, casual, cute, and totally vegan.
My favorite thing on their menu is the balsamic dressing that comes on the Greek salad. I also like their vegan milkshakes, and personally, I enjoy the vegan BLT (I always add avocado). I'd steer clear of the citrus salad dressing (super-acidic), perhaps proceed with a bit of caution with sandwiches with the word "salad" in the name, and perhaps not order the tofu scramble (is fine, but I've had better). I've never had the waffles, but they look delicious!
Oh -- one more thing. Alto Cinco (in Syracuse, on Westcott Street) isn't new, but it's good, and definitely vegan-friendly (the BBQ tofu platter is tasty! Esp. if you like sweet/chipotle BBQ sauces, and tofu, which I do).

Hi! I'm new to the boards, and although I've been reading for a while, I was compelled to post for the first time today. I used to live in Manhattan (since moved far upstate), and still remember how much I loved the spinach and chickpea dish at Moustache (they call it a "salad," but I recall it as having all been cooked together -- here is the URL for the menu: http://www.moustachepitza.com/salads.shtml).
It has (as the menu says) tomatoes (or tomato sauce), lemon juice, and onions (which had been cooked, if memory serves). I read online in a posting on Chow.com from 2003 from someone re-creating this same dish that it may also have had harissa.
It was so, SO very good. I have been looking all around for a recipe approximating this -- I bet it's simple, and I would be thrilled if someone either had the recipe or a close approximation.
