It's a shame that Valsabbion is no longer in business, always felt their food was aimed at higher end diners.

My preferences in order from this year. (Gil's may be open only to groups in the off season)

Restaurant Dubrovnik, at Marojice Kaboje st

Crete (Palaikastro, Elounda, Agios Nikolaos) - any recommendations?

In Elounda, we have been to the Ferryman which was very good indeed.

In Ag Nik, there is KriKri on the edge of town towards Elounda.
Closer to the centre is Knossos.
Central is Embassy, Orfou To Lou and Dionysos.

All of these offer excellent traditional dishes with good local barrel wine.

What's new in Slovenia?

The only place we have been to this year is Pri Lojzetu in Zemona/Dornberk, a little off the beaten track but so worth the effort.

In Ljubljana - Pri Skofu and Gostlina Sokol, and in Radovljica, a 10 minute drive south of Bled there is Gostlina Lectar

Best restaurant in Croatia

Hi Pirate, thanks for the wonderful review. We went to Le Mandrac in July and thoroughly enjoyed the exploring menu with great matching wines (Trapan wine was one that stood out) This was our second time there, and because they consistently serve flavoursome interesting food in a beautiful setting, it is our favourite Croatian restaurant.
We have also enjoyed good food at Valsabbion, and although we are not afraid to try new things, we found it to be a little too experimental for us.
Hi Chef, we are back to Croatia in October and plan to go to Le Mandrac again, maybe even see you there.

Current recommendations around Dubrovnik

Gil's is the best place but is closed (except for large groups) at the moment. Try Orhan, Sesame, Dundo Maroje and Rosarij.

Truffle Hunting in Istria?

I would avoid Zigante. They are all about mass production these days and even import truffles to supply demand. Unfortunately the guy we used in the past has retired but check with restaurants as they have to use properly licensed people. Maybe post on other travel sites to maximize your replies.
