Tampa - Hidden Gems?

For real NOLA food, go to the Cajun Cafe on the Bayou in Pinellas Park. It's the real deal. They get their boudin from Poche's in Breau Bridge, La., and it's excellent. Their gumbo is as good as I've ever had! Best Cajun in Florida.

I have to drive from Naples to Moffitt Cancer once a month for treatment, and I'm looking for a good "meat + 3" restaurant, preferably close to Moffitt.

What makes Jambalaya Jambalaya?

In simple terms, "jambalaya" can be broken down as so: "jambon" is the French word for "ham". "a la", the French term for "with", and "ya" is the African word for "rice." So put it all together and you have "Ham with rice."

Finally made it!

I've read several posts re The Cajun Cafe, and I finally had a chance to go there. What a treat! Everything was fabulous! The boudin, both in links or "balls," was top notch, the dirty rice was a treat, but the star was the gumbo. I've eaten gallons of gumbo over the years, but theirs is the best I've ever tasted. Lassez le bon temps rouler!

I recall a few months ago, there was a thread re a Cajun restaurant in St. Pete. Of course, I lost it somewhere, but I'm going to Tampa for a few days and I'd sure like to find it! I tried searching, but nothing turned up.

Try the Little Bar Restaurant in Goodland (Marco Island) for stone crabs. Or if you stay in Naples, be sure to go to Kelly's Fish House. No disappointments at either place.

Fried Chicken---Deep Fryer or Cast Iron Skillet

That's really a toss-up. I fry it both ways, either in a large 14" cast iron skillet or a large cast iron Dutch oven. Both work equally well. If you want to make gravy, I'd suggest the skillet. I think the secret is to triple dip the seasoned chicken pieces, first in flour, then in an egg wash, and finally in a seasoned flour such as Drakes or Kentucky Kernel. After that, let it rest for at least 20 minutes before frying. That will ensure that the breading will stick to the chicken. 350 degrees it the ideal temp for either method. Good luck!

Where should I eat in Naples, FL?

My all time Naples favorite is Kelly's Fish House, right on US41 at the Gordon River Bridge. They have their own boats and have been in business since the early 50s. Locally owned and operated. Best of the best!
For great Cuban, try Fernandez the Bull on Airport Road. Great chicken and pork!
Neither is fancy nor pricey, just good eats.

I ALWAYS make it a point to hit the GA Pig in Brunswick. Wonderful BBQ, wonderful Brunswick Stew. My favorite.

A friend of mine made one last year, and it was delicious! If I were to buy one commercially made, I wouldn't even consider one from anywhere except Louisiana. Try Comeaux's or Cajun Grocer.

Looking for local flavor in Naples, FL Labor Day weekend 2009 - any suggestions?

Kelly's Fish House on US 41 at the Gordon River is as local as you can get. Opened in the 1950s, it's Naples' oldest restaurant. They have their own fishing boats and do a wonderful job on any kind of seafood you care to eat. Not too fancy, but certainly not a dive. By the way, their surf 'n' turf features thye best darn filet I think I've ever eaten.
If you get down to Marco Island, The Sand Bar is a great sports bar and their food is excellent.
