I Have Found the Perfect Bun for Burgers

I love the Thee's buns too, and I also use them with the Nancy Silverton burger blend...

But, today I read with mixed emotions that Nancy Silverton herself and a partner will be taking over Thee's for a new bakery project called Short Cake.

Nancy - if you are reading this - what about making the Thee's bun at your new shop, both as a public service, a complement to the meat mix from Huntington, and as a reminder of Thee's rich history?

Great, that's just the kind of place I was thinking of (minus the stinky freezer, of course). It seems to get universal 5 star reviews on Yelp so I suspect that was indeed an aberration.

Does anyone know where I would buy the fake meats used by vegetarian chinese restaurants -- the kind that comes in little chunks ready to go in stir fries? I think they make fake beef, fake chicken, fake duck, all totally unseasoned, but I don't know where to get it...

I've always assumed that diddy reese uses the equivalent of a pillsbury chocolate chip cookie dough log for their cookies...which doesn't necessarily taste bad...but you get what you pay for.

Has anyone been to Duna Csarda / Csarda's on Melrose lately?

Csarda's on Melrose is a such a strange restaurant - it seems to go through cycles of good and bad. At times, it's been an absolute great spot for a weiner schinitzel and a slice of dobos torte or cremeschniten. At other times, it's been completely empty and felt like no one cares what is going on there. I know there have been ownership and chef changes over the years.

Has anyone gone recently especially people who can compare it to its hey days (probably mid 90's)?

Also if so, has anyone had luck getting fresh dobos torte or creme schnitten there? Again this is something that has varied somewhat over time (especially the dobos torte).

Super Pollo Van Nuys is reborn as Takatis Pollos a la Brasa...and well worth a visit

For reasons I still don't fully understand, Super Pollo in Van Nuys was seldom discussed here, but in my opinion it served one of the best pollo a la brasa in the LA area. I went today and found that the place is now under new management, has undergone a renovation and is now called "Takatis".

The place was completely empty....combined with the ownership change, I have to admit I was quite worried that the food would not be good.

But, I am pleased to report that it's still excellent. The chicken itself is extremely moist and flavorful (they've brined it, coated it in a tasty rub, and finally slow cooked it over wood in an old oven that takes up half the dining room).. It''s served with the usual assortment of Peruvian sauces including the green aji. The french fries are still completely fresh and made with Kennebec potatoes. I had a side salad, which I found pleasingly sweet and tart, but they also have plantains and beans.

The half chicken with two sides for $9 should be enough food to fill up nearly anyone.

Anyway, it was clear to me that this place isn't getting the business it deserves, so I urge folks to give it a try.

LA Street Food Fest

I haven't been in a few years but the Wally's wine and food events were quite good and not overly crowded. One ticket for all you can drink and eat. Not sure if they are still doing them. However, you do pay for the privilege.

Does Moriomoto ever actually work the line at Morimoto, and if so on what days?

A friend has somewhat of a Morimoto (the person) obsession and wants to go to his restaurant on a day when he will actually be there (I know, based on the reviews here, it's probably not worth it...but). Does anyone know if he works a regular schedule, or even if he is there on a regular basis at all?

Seriously, when I make the fries they come out better than In-N-Out because I go through the proper twice frying steps which they skip...not that In-N-Out Fries aren't quite tasty.

I actually know where to buy them in wholesale quantities (Restaurant Depot) but it's just so hard to use a 50 lb sack of potatoes!

I'm assuming many of you have eaten at Din Tai Fung in Baldwin Park...they cook and serve the dumplings there in an metal stackable steamer...functionally similar to the bamboo steamer, but instead made of metal.

As a side note, I've kind of given up on the bamboo steamers...they are hard to keep clean and they tend to decay.

I've been searching around for a place to buy the particular ones they use there (either by mail or locally), but I haven't had any luck. And in fact I asked them and they claimed I could buy them at any Chinese cookware store, which is clearly not true.

Is there perhaps a Chinese restaurant supply store that sells them? I've actually wandered around the big one on Alameda (whose name escapes me) and couldn't find them there.

Thoughts?

Ordered tonight. This is clearly an exciting addition to the culinary landscape for anyone who lives nearby and enjoys eating at home, as opposed to in a restaurant.

The good: the food is all of the same great stuff from Mozza, although a slightly pared down menu with a couple of surprising additions (Mario's Lasagne - it must be incredible and I can't wait to try it -- I suppose this is the lone pasta because it holds up well to reheating). The baked goods are just so right, in particular the soft iced raisin cookie the conveniently splits into four pieces. While there doesn't seem to be much of an attempt to deliver the pizzas themselves hot, they do reheat well right in the box at 350 and are nearly as satisfying as the fresh ones at the restaurant. I do like dressing their salads myself (as the dressing is on the side to go) as I find Mozza's salads somewhat persistently overdressed.

The bad: they do need to iron a few kinks out of the service, which I have high confidence they will do quickly, given the very high standards of service at the restaurants. A few minor growing pains, though. It does seem like a one hour prep time is required at peak hours. I'm not sure about the delivery area, but it seems fairly wide - not cheap though, $12 for nearby locations for orders under $100. There is parking behind the restaurant, but it is very limited and I suspect it may be difficult to park to pick up your order once it gets more crowded.

I simply can't wait for the pizza "sculoa" to open up where Matthew Modina will give some cooking lessons. Most of Mozza's food is uncomplicated but they do get basic flavor combinations just right, and there is magic in that.

Overall will this place make my life materially better than it used to be? Yes.

Best cheap canned beer

I love cheap relatively low flavor and easy to drink canned beer. My votes are also for Simple Times (and the one thing I'll add is that it also has a high alcohol content - over 6% - it is very smooth but perhaps some tasters do not go for its slightly sweet finish), and for the 30 pack of Tecate purchased at Costco for like $18 (drier than Simple Times and more standard level of alcohol content).

What is the best place for Thai curries in Thaitown?

I know it doesn't get tons of respect as a food destination, but I think that the deer curry at Palms Thai is outstanding. The whole branches of green peppercorns are a nice touch, and of course it's unusal to see a venison curry in LA. I generally don't go at times when they have live entertainment (weekends?). The other great thing about Palms is that it's completely consistent and the service is excellent. Jitlada is tasty, but can be pretty hit or miss.

I do recommend the eat drink or die recipes...all are good...and by the way, the exact ingredient lists are given on the site, you just have to click on the recipe link...anyway we seem to have struck out with our pleas, so far.

I wandered into M Cafe today around 1 and noticed I had missed Lee Gross's cooking demo from 11-1. I believe he prepared the chickpea dandelion salad and one other dish. I would be grateful if someone who attended might share the recipes he did today - I just love their stuff.
