2010: Hatch Chile Peppers are Back

I picked up 2lbs Friday and roasted them. I hope they get better looking, I really had to pick through the first batch from Central Market.
I froze them in 1/4lbs bags. I cooked with them Saturday and Today. Today I added to my eggs in tacos, on a burger today for lunch and then diced up with avacado, pineapple, onion and cilantro over tilapia.
Mine have NOT been hot at all?

Austin Restaurants serving Dry-Aged Steaks?
The ORIGINAL III Forks in Dallas was and I believe III Forks is dry aged here? I may be wrong. They used to have a few marinated (not to be confused with WET aged) stakes as well. You'll find cross over between them and Cool River as is it owned buy the same restaurant group.I've had several dinners here with clients. The meals are always great but the service can be spotty.

I was just at the one in Dallas Thursday night. It was better than average chain food. It seems to lean towards what I would call "New Mexico" mexican. Adobe Pie etc. I did have a wicked good blue margarita (they call it something else I think) I think it's different than Cantina Laredo's Food so for me it wouldn't be a comparison to them.

I realize you weren't near I-35/183 I was simply saying that was the only restaurant depot I knew of.
As far as knowing more about my biz, I was refering to the fact I'm in the restaurant biz and didn't know about this place. I will have to go get it out.

I've found the earlier I get there the better. They bake somewhere else and bring them to the trailer. So, I think they dry out while in the storage carts.

Paul, I wish I could help. I do know they were the cool stove before it became cool have have all the extra features. I am a manufactures rep for commercial kitchen equipment and only know a little about home units. I would check the greatness of the Google and I bet you'll find what you need.

I'm sorry I forgot to tell you. I think I saw an add or commercial for Kiva Kitchen and Bath being the local distributor? I only work with Commercial Foodservice Equipment Dealers so, I'm not up on who all reps Home products.

Well a few quick things before the post police show up.
Do NOT get a commercial range for your home no matter how bad you may want one. Unless you have a commercially rated kitchen in your home it will void you home owners insurance. If your home burns down, they won't pay.
If your going for 5 burners, get 6. You can always leave them off and I found when having a dinner party I can keep sauces reducing or things simmering while I saute something else.
Price ranges are wide from 2-6K - the one I've cooked on and liked were the Garland and Wolf Home Ranges. (the most expensive of course) GE has a new Monogram series that I haven't used but looks great and has a lot of features for a good price.
If you bake, spend the extra money on a convection oven.

Well they are open and it's the real deal Cubano Sandwich.
The bread was pressed/toasted to perfection. Crisp outside and still soft inside. The pork was tender and tasty and had just the right amount of cheese and pickles. Great garlic flavor as well (strong like the REAL DEAL) a lot of time people who make these back away from the garlic they didn't! They also don't put mustard or mayo on it. (Another sign they know what they're doing) If you've ever had one of these in Miami, the old traditional guys will have a bowl of mustard (light or dark depending on youur preference) and dip the sandwich in before each bite. Also, fried plantain chips, were good. Sliced thin enough to be crispy on the edges and still a tiny bit soft in the middle they way I like them.
They said they are trying to get into a groove and will have a Grand Opening soon.

I finally got to Amaya's today for the first time for lunch.
I had the Two Taco Plate, one beef and one chicken with rice and beans. I had no idea the fried corn tortillas that held the meat would still be semi soft, non greasy and SO TASTY! I see why so many on the board love this place. I have a hard time deciding if I liked the beef or the chicken better. Both were well seasoned with not to much lettuce and a good amount of cheese. Seems like so many skimp on the cheese. The refried beans had good flavor and just a hint of the lard taste that I like in a good batch. The rice was a little dry, but I got there at the end of lunch rush so it may have been the last of the batch made for lunch, but still good. I'll be back often!

Silke took the words right out of my mouth. I like their burgers and the produce is always fresh. There is cheaper, but fresh and clean all day everyday is a good thing. I think Patrick does a good job and if you ever get to talk to him at one of the stores you'll understand he really cares about the product he serves.

Having been transferred here from Dallas I like both Flying Saucer and the Gingerman. The locations here aren't quite as "broken in" as the one's in Dallas and Ft Worth Locations. I like them moslty because they had some nitrogen push beers. Saucers are being franchised across the country. I think the original Saucer owner is Shannon Wynne, the guys parents started Six Flags.

Be sure to specify if you want a Kona Blend or 100% pure Kona. BIG difference in Price but also in taste. Decoty Coffee will sell you 100% Kona. I picked up a bag last time I was in San Angelo about $50 for a pound if I remember. They have a website you can order from http://www.decoty.com/ The last time I was at Texas Coffee Traders RC didn't have any.

Bob & Mike are a Father-Son team who used to own a fine dining restaurant in Waco. Yeah, I know Waco & Fine Dining is an Oxymoron. But the food there was really good. Anyway, they are opening a Chicken Tenders Place with other items. Should prove to be good, as they were good operators before. Can't wait to see if they have a soft opening and try the Tenders.

I just saw that today on my way to a sales call at St. Davids South. I asked a few of the kitchen staff, but they hadn't noticed it. I'll stop next time.
Coffee!
I actually sold one of the best commercial coffee machines for several years and buy my coffee for home at Texas Coffee Traders. They have a custom made air roaster that roasts the beans differently than a barrel or drum roaster. They have a terrific selection. Some organic and free trade. They also do tastings as well. As far as a local place Ruta Maya is my fave along with Mozart’s and Summer Moon. As far as Starbucks, it'll do in a pinch but in general it is over roasted, bitter and the top of my coffee shouldn't look like and oil slick.

Late getting in but Chris' Little Chicago is the Real Deal. Get The Original with real Vienna Beef Hot Dogs, the relish, sport peppers, pickle, tomato etc. Now I know what I'm having for lunch!

Matt's El Rancho
There seems to be a Love/Hate thing with El Rancho. The drinks at Matt's are as good and the food is definately better than OTB though.
