Brisket does not fit in dutch oven - HELP
I have no problem covering the pot, it is just that it does not fit properly on the bottom of the pot. Should I still cut it?

I am about to cook a 3-4 pound beef brisket in a dutch oven (oval, 6 quart) but I just realized that it doesn't really fit properly. If I put it in, some of it will come up the sides a bit. Is this a problem? Can I braise it properly like this or would I be better off cutting it into pieces?

What to do with first Staub??
After months of figuring out which dutch oven to buy, I finally settled with a 6 quart Staub "Coq au Vin" oval dutch oven (grenadine!). I am wondering though what special things I can do with my new toy. So far, I have made a tajine, several pork roasts, and I am preparing my first no-knead bread. What are some not so obvious things I can do with it, such as the bread??
As well, what are some delicious dishes I can only make (well) in an enameled cast iron pot?

Best Utensil Set Brand and Material
I am looking to pick up a new set or individual kitchen tools, such as spatula, ladle, spoon, etc. and I'm wondering if anyone has any suggestions for a brand and the material that would be most durable and versatile. I have explored stainless steel of course, and bamboo, olive, plastic and silicone coated stuff. I use stainless steel pots and pans mostly but also have a couple non-stick and cast irons stuff, so I don't want to damage those. Do you usually have a separate set for more delicate stuff or just use plastic/wood to start with.

Miyabi Japanese Knives

I am looking at Japanese knives for the strength and the weight of the weight mostly, but also because they are just so nice :) As for the set, I didn't mean a whole set, but maybe 1-2 to start off with.
Other than Miyabi and Hattori, I see that there are loads of other brands as well. Are there any other damascus-bladed brands that you would suggest that are around the Hattori HD/Miyabi 7000D price range? Thanks :)
Miyabi Japanese Knives

I am looking to buy my first japanese knife and I am deciding between Miyabi and Hattori. I couldn't find much information on Miyabi since it looks to be quite new, but Henckels is a pretty well trusted brand, so I have relative confidence in their quality. However, the Hattori look to be more "authentic" since they are all hand made.
Has anyone had any experience with Miyabi and can they comment on the comfort of use and performance as well as quality/durability. I am looking at the damascus blade line, as that is a feature I am really wanting for my first set.

But if you're looking for something to brush oil, I don't think it would be a tawashi. It seems to be more for scrubbing than for applying anything. It is great for cast iron though and on other stuff it is really rough but has no risk of scratching since it's coconut fibre.
If you're in Montreal, there are a couple asian grocery stores that sell it apparently. There is one called Hello Market (I think) on Maisonneuve near Atwater, and a great Japanese store that probably has anything japanese you'd ever want, on Sherbrooke in Westmount (near Victoria if I'm not mistaken).

I was just in the Monkland store yesterday and the clerk said that all the Cuisine Gourmet stores are closing except for the new Monkland one.
I also went in the Drummond store on Friday and they are having a 25% off sale right now but the liquidators said that the discount will probably continue going down.
