IS THERE MANY who think pan rosted thick steak much "superior" than grilled one??
I much prefer pan roasting but enjoy a grilled steak every so often to break up the monotony.
What would you add to this roast beef sandwich to make it PERFECT?

Yucca Root (aka Cassava) info needed
Check the frozen food section for them already peeled and ready to cook (follow package directions and skip to putting them into the fridge as follows). If you buy them fresh they should be cut into 2" to 3" long pieces. On the freshly cut end you will see the "ring" of bark that needs to be removed, it is about 1/16' thick, I use a knife or peeler. Once the bark is removed use your knife to score an "X" on each cut end of the yuca pieces (this helps them split later on). Drop them into boiling water and boil until they are soft and can be pierced with a fork or knife (20 to 30 minutes). They may also be splitting open at this point. The yuca can be served at this point with a simple mojo sauce of oil, lime juice, and fresh garlic spooned over the top. For the fries you like the yuca should be put in the fridge to cool. Once it is cooled, and the yuca is firmed up a bit, cut the yuca pieces in halves or quarters (it will naturally let you know what it wants) and remove the fibrous strip out of the very center. Squeeze the quarters (or halves) lightly in your hands to compact them. Drop them in oil to deep fry or you can pan fry in less oil, turning a couple of time until browned or golden. I, personally, like to use a mojo to dip the fried yuca in also, though my cuban ex-gf looked at me like I was putting ketchup on pancakes. You will find that how long you boil them (and how hard you squeeze them) for will vary the consistency of the final product considerably, from denser (less time boiling) to looser (more time). Lazy way to brew teabags without kettle (not for purists)
Put 4 cups of water in a pyrex measuring cup and a family sized Luzianne teabag then microwave for 6 min 30 secs or so. Dunk a few times, let it steep a bit and add water if needed as you pour a glass. If the bag ruptures you are microwaving it too long.

I always figured I wasn't metabolizing the alcohol well. I get hot ears, splotchy chest, and sometimes restless legs when I try and sleep. It is all very uncomfortable and I rarely drink anymore.

Get an adapter and you can connect the 20lb propane. It gets very hot- you can read about it on bbqsource forums I think it is. Google the grill for a better idea on the forum. Folks have pics of food there.

What you can't lug around 100+ pounds of pot and stock? Lol. I am with the Cuisinart Multiclad rec earlier and the price leaves you with cash to buy a couple cast iron pieces and a dutch oven if you shop well. I got 12 or 14 pieces and use every one of them. They look good and keep nicely.

If I were to describe the taste of goat cheese it would be...like what the beard of the billy goat smells of since he has been "spraying" it. Totally digusting and gamey. I used to enjoy some kinds now I can enjoy none.

Might rethink your chosen profession if providing a lemon slice is doing you in. If a restaurant were to begrudge me a lemon slice the first thing that comes to mind is definitely cheapskate.

Another vote for Luzianne it has more briskness imo, besides why take off more packaging than you have to? My way (usually) is 4 cups water in the pyrex plus one one family size teabag. 6m30s in the microwave dunk a few times upon removal. I add splenda as I pour out each glass.
The perfect pernil
My usual is a paste of garlic, cilantro, pepper, an oil. Make piercings an inch or so deep all over and stuff full with paste. Salt and rub paste on the outside of the skin and let it marinate 4 hours to overnite blah blah the usual. Preheat the oven 450 degrees. Slide the roast into the oven and lower the temp to 325 degrees. Don't use a wet rub as this can "steam" the skin and prevent crispiness. Cook to 165 degrees or so and check the skin by rapping on it with a knife. This method results in nice cracklings over at least 75% of the skin. My ex gf's mom (native cuban) somehow managed to get it all crunchy, even the delectable part on the underside. I thought she was kidding the first time she offered me this piece with all the fat rendering underneath the skin. I din't want to be rude so I ate it...glad I did..wonderful stuff. Good luck. Oh and if you boil the yucca as Cheese Boy suggests (frozen really is as good and much easier) try lightly frying them after boiling by squeezing them into shapes about the size of two thumbs and drop into an inch of oil turning until browned. Mojo is not traditionally served with yucca frita, but I like to have them with that anyway. An avocado and tomato salad also as something lighter.
