Non-Restaurant Foodie Gems?

Pita Market on Dempster in Skokie. Next to the original Pita Inn.
Pita Inn has crispy and flavorful falafels, with all of the traditional Mediterranean classics being very good.
I'm partial to the lentil soup and baba ganouj.

You got my attention, I had to check where you are. Berlin was not what I expected. Is "Qing" common in Germany? I've been to a few cities in Germany for a few days but only ate out. Forgive my ignorance, my interest is genuine.

What do you make that is SOOO easy yet you impress yourself every time you make it?

Crisp Black Bean Tacos

You need:
Cooked black beans smashed up, chunky with some whole ones in there (warm or room temp)
Your favorite hot sauce
Some onion, sliced or diced
Veg oil
Fresh corn tortillas
Pan
Wood toothpicks

1. Heat oil in pan to a shimmer
2. Heat the tortillas in a microwave or oven (if in oven, wrap in moist paper towels) enough so they are flexible
3. Add beans, onions and hot sauce. Not too much of anything, less is more for these I think.
4. Fold the tortilla in half and use a toothpick at the top of the tortilla to hold it together
5. Drop it in the oil and fry that baby until just golden on both sides, put in a large bowl lined with paper towels
6. Serve, repeat, keep going. This is not I make a lot of then serve, unfortunately. For best flavor just make a few at a time, then go back and do some more.

Cheese is great, but for these I prefer none. Crispy, spicy and simple..

Tomatillo recipes?

I like okra on pizza the most when using the frozen, cut variety. Favorite is GOYA.
It is very good, but looses appeal when overcooked (gets slimy), so for frozen, take out enough to cover the pie to your liking a minute or two before cooking.
8-14 minutes at 450 is my window for frozen okra as a topping.

If your pizza cooks in less than 8 minutes, let the okra come to room temp first.

The fresh okra worked best on french bread style pizza, less cooking time. Cut into pretty thick circular slices.

It's good with traditional pizza sauces too.

Tortillas. Traditional / non-traditional uses?

I like having them warmed and ready on Thanksgiving for an otherwise traditional meal.
Corn tortillas are my preference for all uses except for mouth watering burritos.
Also, leftover t-day grub makes for good burrito filler.

Tomatillo recipes?

Simple salsa verde:
1 1/2 pounds tomatillos, halved, removed from paper skin, roasted in oven (cut side up) for about 12 min at 425/450. Way better on the grill (use a little oil on the tom skin)
Blend those greenies with about 1/4 white onion, a hot green pepper or two and some cilantro.
If using the grill, throw on the onion and peppers for additional smoky flavor.
Salt.
No lime for me.

I use this salsa on homemade pizzas. Jack or pepperjack cheese and okra are my favorites with it.

Regarding your question about using them in southern recipes, I don't know. They have a distinct flavor, that's for sure. I do know that I have not really liked them as a tomato substitute for the pasta/gnocchi dishes that I have played with.

Any ideas for making beets more palatable?

Read Jitterbug Perfume by Tom Robbins. It takes a bit to get into, but it's an interesting book.
Not a cookbook or even about cooking, but you do learn to look at beets differently.

My fiancee has never had a burrito...

Favorite meat, veggies and other specifics will help all of us give suggestions. Likes guac, sour cream, cheese, etc.

The best burrito I have ever had is from Garcia's on Western Ave and Lincoln Ave. My perfect burrito from there is ordered as:

Rice
Beans
Onions
Tomatoes
Cheese

What west suburb? I am in that area often(A.H., M.P., Palatine) and eat burritos on occasion there. I don't eat meat, but I eat burritos with those who do.
