Why I want these items?

Well,

Blackstrap molasses - To put in a homemade powergel. Blackstrap molasses contain the electrolytes and nutrients for the stressed body. Blackstrap molasses is one of the most nutritious food items around; chock full of calcium, iron, potassium, sodium, and other vitamins and minerals..

Brownrice syrup - The energy derived from brown rice syrup is

50% complex carbohydrates 2 to 3 hours to be absorbed

45% maltose absorbed in about 1.5 hours

3% glucose absorbed into the bloodstream immediately

This release of energy over a long period of time is exactly what survivors are looking for in a power gel. But that's not all. Brown rice syrup is very healthy for you as it is made up of easily digested simple sugars.

Cider vinegar - For wrapping up cheese to stay nice for a longer time, when not refrigerated.

If you could tell me some substitutes for these, it will help for sure.

Do mean to say that the "Gur: we get here in all general stores is molasses? It is made out of sugarcan by boiling etc. It's available in brown color but I think black one is also available. But I think that's called brown sugar.

I'm also making a solar cooker / oven so was wondering if something can be canned in the solar oven. I found this soar canning bit here:

Only tomatoes are shown but I guess other fruits can be canned the same way.

I was wondering that 85 minutes in the boiling hot water would just do something real bad to the towel cloth. Okay, should the towel be a thiick one or I should fold to hold the jars intact?

By "covering the jars by two or three inches" I hope you mean to cover by water above the jars by 2 - 3 inches? If not, pls explain.

If you have a pot that is deep enough to cover over the tops of the jars with water by 1-2 inches and have room for boiling, you can use it. You need a rack or a folded towel in the bottom. If you don't have a lid for it, use a baking sheet or pizza pan.

Slip the tomato skins by dipping in boiling water then plunging in cold water. Core. Fill Jars with raw tomatoes, pressing until spaces fill with juice. Leave 1/2 inch headspace. Add 1 Tb lemon juice per pint and 2 Tb lemon juice per quart. May add salt (1 tsp/qt) for flavor if desired.

Lemon juice must be added to insure safety against botulism.

The processing time at sea level is 85 min.

Adjust lids and process in a boiling water canner for 85 minutes at sea level, 90 minutes at 1001-3000 ft, 95 minutes at 3001-6000 ft, and 100 minutes at 6001-8000 ft.

If I keep a folded towel inside and boil for 85 minutes (I'm at sea level), won't that towel become useless?

It's also difficult to get a canner around here so I'll need to go to the town side and a pressure canner might be pricey to. So, could I try your aluminium stock pot method? What precautions do I need? I'll only need it for water bath canning for tomatoes and fruits.

Is that possible? Someone told me that a canner is nothing but a large pot. Will I be able to atleast waterbath can if I use a large 10 litre presuer cooker or even a pot, tightly covered?

Can someone pls tell me what are "blackstrap molasses" called in Hindi? From the dictionary, I was only able to get the word "Raab" which no one seems to know of here.

Also I couldn't find any "brown rice syrup" here. Does anyone know the Hindi name and where it is available? Online links will do.

I went to the biggest departmental store in my area and there too they didn't know about molasses, they only had some "date syrup".

Same thing happened for cider vinegar, tho normal vinegar was available. How can I make cider vinegar at home? How is cider vinegar different from usual vinegar?

Yes, I'm after an emergency home survival and survival kits. I'm in a place in India freuented by riots and nowadays water is scarce too.

I hadn't looked at the main page. Seems like a joke now. I got it thru google. Thanks for pointing out. I had only read the survival page.

I'll taste a little overnight soaked rice tomorrow morning.

I think you are right since raw rice can't be reconstituted. Would someone know what minute rice is called in Hindi/Marathi/Punjabi ?

Wouldn't soaked raw rice without cooking cause indigestion?

Well, really terrible then.
I'm myself a Punjabi but know about 5 other Indian languages. Hindi is prefarble tho. I know what rice, beans and peas are called in Hindi. That site confused me. I thot of "pohey" or beaten rice at first but they can't be kept in water overnight.

I need to know what is dried rice, dried beans and dried peas. What are they called in Indian languages and where in India can I get them? I googled but in vain. Have seen too many images but no use. I need this info fast if anyone can help.
