A couple of Rose Levy Beranbaum's, several by Elizabeth David, my 2nd edition of the Larousse Gastronomique (I read it when I lived in Europe) - other authors: D Kennedy, M Jaffrey, P Casas, M Hazan, D Madison, F Point - and most of the books by King Arthur Flour
