The difference between stick butter melted and clarified melted. Clarified is essentially a concentrated butter flavor or a pure fat that will enhance all the other flavors that come in contact with it whether dipped, saute', or baked.
The water/moisture and milk solids dull the butter flavor of regular stick butter.

I like to substitute Clarified Butter for the regular butter, it will greatly emphasize your flavors in the potatoes recipe. Might need to add a dash more of salt since clarified does not contain salt.

I love putting just a little Clarified Butter on my corn. It really emphasizes the flavor of the corn and with a little salt is to die for.
