I had thought about a soup because I love bean soups but I'm just afraid it is going to be too much food. The dinner party is only for 4 people and all four of us are petite women with small appetites so that's why I'm not doing a traditional meal with pasta course, salad course, meat course, etc. Was trying to keep the menu small.

I agree that melon in winter is not ideal. I just wasn't sure what to do instead. When I was searching for recipes, I kept finding ideas for different crostini which I can't do because the menu needs to be gluten-free. Can't do arancini either for the same reason. So, I was just looking for a small, simple appetizer that involved whole foods that I knew would be gluten free. So, I'm not set on having to serve prosciutto to start, I just need something that is gluten-free. Other suggestions for starters are welcome.

I am having a few girlfriends over for a Rustic Tuscan Dinner Party. One of my friends has a food allergy so the menu needs to be gluten-free. For an antipasti, I was thinking prosciutto wrapped melon. For dessert, perhaps just fresh berries and maybe some handmade chocolate truffles. I am not going to do a traditional first and second course because I think it will be too much food for us so I am just doing a single main course...a risotto. I can't decide what to serve with it. I have several risotto recipes I love and I think I am going to use one that had red bell pepper and peas in it. I was thinking of serving it with roasted asparagus and steamed spinach on the side but I probably need some protein as well, right? Would it be strange to serve white beans with sage as the protein? Very tuscan but not sure about serving a creamy bean dish with the creamy risotto. Perhaps I should do something like seared scallops instead. Suggestions?
Perfect Light Desserts Cookbook- using real butter, sugar, flour and eggs.
I got this cookbook for Christmas and just made my first dessert from it. I made the blueberry crumb cake and it was delicious! I took it to a cookout and no one even knew it was a light dessert. I do Weight Watchers and this was great to have such a tasty dessert to eat that didn't ruin my diet and it was a pretty decent size portion.
