ideas for relatively healthy French party food
I'm going to a French-themed party and need to bring a dish -- just something like a appetizer, snack, or treat, not a full entree or side dish. I don't eat dairy, so I want to bring something dairy-free and relatively healthy, but that's hard to find when you're talking about French food. ;-) So does anyone have any ideas for French or French-inspired food that I can either make as-is or perhaps tweak to be more healthy and dairy-free? So far my only idea is buckwheat crepes with some sort of non-cheese filling.
need a low fat/calorie, dairy-free pasta recipe
I cooked up a bunch of whole wheat pasta shells for my toddler, which she turned her nose up at. So now I would like to make pasta salad out of it. Here are the problems:
-- My husband just started a weight loss study where he has to limit his calories and fat
-- I try not to eat dairy (but I'm not vegan; we both eat meat)
Does anyone have any great pasta recipes (preferably pasta salad since that's what I'm in the mood for) that meet these criteria? Obviously I need to add a lot of veggies or beans to the pasta to bring the calories per serving down, but I'm not sure what veggies to use in a pasta salad in February. (Not quite asparagus season, alas!)

I'm trying to find interesting dishes to use yellow squash in. DH and I find it a rather boring vegetable, even with a sauce on it, and I desperately need ideas for how to pump it up. But, most of the recipes I can find involve cheese, which I do not eat (no dairy at all, actually). So, any good yellow squash recipes you can recommend? They don't have to be mainly squash recipes -- they can be meat or veggie entrees that happen to have some squash in them. I just need ideas for how to use it up in a yummy way!

I have no problem with traveling to the boonies to get good Q, I just would like the boonies to advertise their Q-producing fundraising efforts to the non-boonies. :-)

It seems like churches and fire departments and that sort of thing are frequently having pig pickins and making brunswick stew as fundraisers. But I never find out about it until after the fact, because it seems the only way they are advertised is on some little sign on the side of the road in the boonies. :-)

giant Oreo cake
Yesterday was my husband's birthday, and he loved his Oreo Cakester cake!
I used this recipe for the cake:

It was moist and somewhat light but still had a good chocolate taste. Not super sweet, which matched the Cakester flavor well. I don't think it was right on, but my husband said it was, and ate an incredible amount of cake in one day, so it must have been at least good enough. :-)
For the filling, I used your recipe, katecm. I thinned it out with milk, but added too much on my practice run, so it oozed out the sides of the cake. The second time, I also thinned it out, but just the tiniest amount, so the cake held together perfectly.

Thanks katecm! It does sound like it would match the flavor of Oreo filling. But, you don't think this would be too thick/rich for use between full-size cakes?

Yes, I saw this recipe, and although it is constructed to look like an Oreo, I'm not convinced it would really taste like one. The devil's food cake would probably work well to imitate the Oreo Cakester, but the cream cheese filling seems wrong -- delicious, but wrong. :-)

My husband is obsessed with Oreo Cakesters and wants a birthday cake that is essentially a giant Oreo Cakester. It's easy to find chocolate cake and vanilla filling recipes that I could craft into a giant Oreo, but most chocolate cakes don't actually have that unique Oreo taste. Does anyone have a recipe for a chocolate cake that tastes like an Oreo, or an Oreo Cakester? And filling suggestions? Thanks!
Kandas - Morrisville, NC - Great Indian Food
My husband and I went last night and loved it. We too had the Kandas Feast for $39.
For our appetizers we had the meat samosas and veggie samosas. Both were good, but the veggie far better.
My husband really liked the mutton soup, mainly because it was spicy, I think. I had the mulligatawny soup and liked it, but wasn't blown away.
The naan was awesome. We too had plain, garlic, and roti. My husband, surprisingly, preferred the roti over the others. He was wild about it. I loved all of them -- probably the garlic the best. We will definitely try some of the many other types when we go back.
For my entree, I had the kadai lamb. It was delicious, but a bit too spicy for my tastes (disclaimer: I am a wimp). Very nice flavor, though, and not fatty or greasy. My husband had the fish moilee and loved it. It was very mild, which he usually isn't a fan of, but the flavor was so nice, so all was forgiven. I loved it too, though I don't like fish much, so much so that I would definitely consider ordering it when we go back.
For dessert, I got kulfi (ice cream) and my husband got gulab jamun, and we split them. They tasted great together. The gulab jamun was very good, but extremely sweet. The ice cream was much less sweet than American ice cream, so it paired well.
The place itself is nicely decorated but nothing fancy, and clean. At the end of dinner, though, there were a couple flies buzzing around, which wasn't pleasant. Service was so-so; I don't think our server understood much English, and we didn't see much of him.
I was actually pretty impressed at the turnout for a Monday night. When we got there at 6:30, no one else was there, but a couple tables showed up shortly after us, and by the time we left (two hours later), it was probably 80% full. Lots of Indian people there, which is always a good sign.
All in all, we will definitely go back, even though it's a 30 minute drive for us in Carrboro. There's no way I can squeeze the Kandas Feast into my belly again, but it was fun to try a bunch of stuff, and I have lots of ideas for what I'd like to have next time we go (including the chicken tikka masala!).

My birthday is tomorrow and I'm still trying to decide what type of cake for myself. I've almost decided on the Elvis Cake or Fluffernutter Cake, which has been covered here (http://www.chowhound.com/topics/438182). The original recipe is at http://www.foodaphilia.com/2007/08/fluffernutter-cake.html, but I'm thinking of using this adaptation at http://cookiebakerlynn.blogspot.com/2008/01/fluffernutter-cake.html. In this adaptation, she mixes marshmallow fluff into the peanut butter frosting.
I don't want to buy marshmallow fluff, but I do really like the idea of using a marshmallow-based frosting for this cake, as I don't want something too heavy. I was thinking of taking a basic marshmallow frosting recipe (egg whites, corn syrup, etc.) and then folding in peanut butter afterwards, to make a peanut butter-flavored marshmallow frosting. Two questions:
1. Do you think this would work, or would it cause the frosting to not hold together well?
2. Even if it did work, do you think it would taste good? I definitely still want peanut butter flavor in this cake, just not so heavy.

My hometown, Downers Grove, IL, has a great bakery downtown, Busy Bee Bakery, that makes the best butter cookies. "Butter cookies" means a lot of different things to different people, so the type I'm referring to are the ones that you commonly find in a deli and buy by the pound, with a kind of swirl pattern like they were made with a cookie press, and decorated with all different colors of sprinkles. They're firm but not crisp -- they shouldn't make a sound when you break them, but they shouldn't bend either -- and they have a melt-in-your-mouth sort of texture.
I live in NC now and don't have access to fantastic deli butter cookies any more. So, I want to make my own. Does anyone have a recipe for this particular type of butter cookie? I've found tons of butter cookie recipes, of course, but like I said, that means different things to different people, so I don't want to try dozens of the wrong types of butter cookies (waistline can't handle that much experimentation!). I'm not sure if the type I'm looking for has a specific name that would help me track down a recipe more successfully. Any help is welcome.

Yes, I looked through many KOP threads. The problem is that most of them do not recommend anything within KOP itself, and I don't know if the towns that do contain recommended restaurants are within my three-mile radius. So, that's why I've started a new thread with my unique limitations.

Is this a bakery, restaurant, or caterer? I'm always looking for good bakeries and have been generally disappointed with the offerings in central NC. My main thing is cookies, but good pastries and cakes are great too.

I'm going to a conference next week that's being held at the Dolce Valley Forge hotel at 251 West DeKalb Pike in King of Prussia. I'm not going to be renting a car (if I can help it), but the hotel does have a shuttle that will take you anywhere within three miles of them. I know that will get me to the mall (and I do intend to go), but I really, really don't want to eat at chains. I'm hoping there are some local places with interesting food within my three mile radius. Any suggestions?
I like just about everything except seafood, and I try to eat lots of veggies and whole grains. I'll need a couple dinners, and possibly one breakfast. And though I don't *need* any baked goods, I'm a cookie junkie and always on the lookout for local bakeries with fabulous cookies, so on the off-chance there's one near KOP -- I'll take those recs too. :-) Thanks!

This thread is great -- I too am going to be in Ventura for business in September (next week actually) and I'm a single woman looking for some good places to eat in the area (I'll have a car too). I'm coming from North Carolina, but I lived in LA for a couple years and have family in Southern California, so it's not totally foreign to me. I've only been to Ventura once, however, and it was only to the beach. Don't know the town or the pier at all.
Anyway, I'm interested in this bakery, because I'm always trying to find excellent bakeries -- and there really aren't any around me. At least not for cookies, which is what I'm always looking for. Or scones. What type of bakery is this -- bread, cookies, cakes? I'm sure it does multiple things, but, IMO, bakeries are usually best at a certain area of baking.
If there are any places in or around Ventura with awesome cookies and/or scones, I'd love to hear about them. Oh, and another question -- any Whole Foods in the area sell Carol's Cookies? They're made in Chicago, but a fellow cookie loving friend of mine was informed by her sister that they are now selling them in her Seattle Whole Foods, so I'm hoping they've made it to many places in California too!

After having used both, I like the electric coil better, but not by a huge amount. The thing I really dislike about my smooth-top is my constant paranoia about permanently marking up the surface. :-) I'm not a really experienced cook, though, so I can't really tell you if one is truly better than the other for the type of cooking tasks you say you like to do.

Yeah, that's a good point. But then the problem is finding a good bakery! I like Great Harvest bread for every day bread, but they don't really do French bread or sour dough or the like, that I've seen. I've yet to find a good bakery for my favorite thing of all, cookies!
