Australian wine merchant in Tokyo

I have just returned from tokyo to sapporo and did find the Bessho-san's wine shop. AMAZING!!! A must place to visit and an amazing guy who owns and runs the place. The guy is SO down to earth its great. He just loves wine regardless of where its from and what scores its got, its all about what's in the bottle. Guys like this have to be supported as they are the true independents - they buy what is good and sell the passion. Anyone who lives in Tokyo and loves wine should at least visit it adn support it. In a world/country full of department stores and shopping malls here is a small guy doing something great!

Pairing for Crab Cakes and High Acidity Pasta

If the crab cakes have chili why not try Riesling cuts thru and clean the palate! Pasta - yes different ball game I think. If you keep the pasta go for Chabils as I agree with Bill.

English Speaking Chef

Kamimura yuichi is a Japanese chef in Niseko, Hokkaido, food is just like Tetusya's in Sydney (NSW) as he spent 5 years there. Food for me is French using Japanese ingredients - ponzu, soya base etc. Incredible combinations
He speaks English. His rest is called Kamimura. have a search on the net.
During the winter he does a set menu 13000 yen pp. He is worth talking too.

Nagoya, Tokyo, Osaka, and Sapporo Essentials?

Sapporo - full of great places - Ramen - I would stay away from the ramen alleys as they are for tourists and expensive.
great ramen yukikaze excellent opens 9 pm closes 4 am! address is south 7 west 4 daiana minami south 7 building.
Hofe - French south 1 west 7 white building. Uses lots of hokkaido ingredients, deer, bear vegies all great
Remember Lunch in japan is cheap and good. Sapporo average less than $10
Bar - Pinot 20 wines by the glass at least always changing opened till 2 am
Potatoes up here are excellent
Where are you playing?
