Looking for Recs in Progreso & Merida
We have two families ( all adults) will be traveling to this area for Christmas week. It is our first trip to the Gulf Coast, having been visiting the Tulum area for many years. We understand that there is a major difference between the two "coasts". We have had a chef at the homes we have rented before, but have been unable to find the same type of service in the Chicxulub/Uaymitum, where we will be staying.
In lieu of this, we are looking for recommendations for dining in the area including Merida. I see a few on the board already, but not too many.

Flat Chicken from Tulum
A group of us just returned from Akumal/Tulum and fell in love with what we call "flat chicken" that you buy on the streets in Tulum and Akumal ( and other places I am sure). Now our goal is to figure out how to fix it now that we are home. We grill a lot of chicken so are mostly interested in how they cut the chicken and press it to make it flat. If you have had it you know that the whole chicken is flattened out. Any help will be most appreciated.
