when sauteeing chicken in a CI skillet, when deglazing (I use water or broth), does deglazing remove the seasoning from the CI skillet?
I've always used stainless steel and I would like to break in my new
CI skillet for the first time use.

appreciate your answer.
your advice about "two steps forward, one step back" is what I was concerned about.
Guess I better build up the seasoning before I attempt even a little tomato.
I'll make the soffritto in the cast iron and then transfer it to stainless steel for the tomato addition.

thanks for your response, I was actually referring to the tomato that is added After the soffritto is made, the soffritto isn't an issue, the issue is the acid in the tomato, thanks again

Tomato pasta sauces in cast iron?

My grandmother cooked all our tomato sauces in the cast iron skillet.
Now I learn that tomato shouldn't be cooked in cast iron because it
harms the seasoning of the skillet.
Is this correct? After you make the soffritto, can you add the tomato to the skillet without harming the seasoning of the skillet?

I'm going to use your process including the sandpaper to make cleaning in the future a breeze...only thing, it will remove the Lodge pre-season that supposedly came with the new pan...it's a grille on one side and flat on the other....I intend to use it on my gas range...

yes, I tossed it and learned that I need to boil the peas soft then add the cooked vegetables and ham to it

Are you saying I should have boiled the split peas and then simmered them? otherwise I end up with peas that won't get soft?

pea soup not getting soft

Thanks for all your thoughtful responses.

No, I haven't added salt. It's plenty salty for me.
It has chopped ham, carrots and celery.
I used dried split peas.
I've made this before without this problem.
As a matter of fact, just soaking peas will soften them.
Gosh, I'm so disgusted with my cooking such a simple thing and have it be wasted like this. It's 9 pm here and it's been simmering since 11 am.

I've been simmering pea soup all day and the split peas are still not done.
The chopped carrots and celery are done, but the split peas are still mostly hard. It's been simmering all day.
What am I doing wrong? Is it supposed to boil??

I'll go ahead and wash it before its first use., wipe dry, wipe with Crisco I bought for just this and bake in oven at 400 on top of tin foil for one hour.

just purchased a stove-top grille pan.
I want to grille vegetables on it now and I'm wondering since it's not fatty meat, if the new, seasoned surface will be damaged.
The scant instructions say it already has a seasoned surface and I don't need to do anything.
What can I do to prevent damage?

I just happened upon this info:
Crostini is toasted in the oven and is crisp and DRY ALL the way through..

Bruschetta is grilled, broiled or griddled and is toasted on the outside but NOT DRY all the way though.
