I'm going to use your process including the sandpaper to make cleaning in the future a breeze...only thing, it will remove the Lodge pre-season that supposedly came with the new pan...it's a grille on one side and flat on the other....I intend to use it on my gas range...

yes, I tossed it and learned that I need to boil the peas soft then add the cooked vegetables and ham to it

Are you saying I should have boiled the split peas and then simmered them? otherwise I end up with peas that won't get soft?
If yes, thanks for the great info and I'll need to learn that for next time.

Thanks for all your thoughtful responses.

No, I haven't added salt. It's plenty salty for me.
It has chopped ham, carrots and celery.
I used dried split peas.
I've made this before without this problem.
As a matter of fact, just soaking peas will soften them.
Gosh, I'm so disgusted with my cooking such a simple thing and have it be wasted like this. It's 9 pm here and it's been simmering since 11 am.

I've been simmering pea soup all day and the split peas are still not done.
The chopped carrots and celery are done, but the split peas are still mostly hard. It's been simmering all day.
What am I doing wrong? Is it supposed to boil??

I'll go ahead and wash it before its first use., wipe dry, wipe with Crisco I bought for just this and bake in oven at 400 on top of tin foil for one hour.

just purchased a stove-top grille pan.
I want to grille vegetables on it now and I'm wondering since it's not fatty meat, if the new, seasoned surface will be damaged.
The scant instructions say it already has a seasoned surface and I don't need to do anything.
What can I do to prevent damage?
It's a Lodge.

I just happened upon this info:
Crostini is toasted in the oven and is crisp and DRY ALL the way through..

Bruschetta is grilled, broiled or griddled and is toasted on the outside but NOT DRY all the way though.

that's just it, as I said they would get dried out before they had a chance to toast and they would turn into croutons.
But now I know the oven method was wrong as I'd seen on tv cooking channels

When I bake the cut, oiled bread for crostini/bruschetta in the oven at 400 degrees, before they have a chance to get toasted, they dry out like for croutons. Now I put them in the toaster oven.
But I can't toast many pieces in the toaster oven.
So, I would like your advise on what I'm doing wrong with the oven so I can toast larger quantities in the oven (at least a whole loaf).

I haven't been able to find how many teaspoons of sodium citrate to use for 2-3 cups of cheese for mac-n-cheese.
All the measurements are in grams and I don't have a scale.
Can anyone tell me approximately how many teaspoons/tablespoons of sodium citrate I need to use for 2-3 cups of cheese?
