Hard lime rinds in my marmalade
Hiya - Yesterday I made 2 batches of lime marmalade and the same thing happened to me. On both occasions the rind was cooked, soft and juicy before I added the sugar - then, disaster - hard, dry not even chewy, rinds. I tried processisng it but to no avail, so with the second batch I put it through a sieve and ended up with jelly. Flavoursome, but not marmalade. Next time I'll try removing the pulp before adding the sugar then adding it later or maybe adding some lemon rind to it instead. Who knows? Just had to let you know that you weren't the only one with this problem. Any other solutions?
