Dairy free creme brulee

I've successfully made panna cotta in the past, but I wanted to do a dairy free crème brulee as I've never tasted one.
I think the suggestion with the coconut milk which has a higher fat content will be something that I can try this weekend.

Dairy free creme brulee

Hi,

I am looking for some advice on making a dairy free crème brulee. I tried making it recently and followed the recipe (substituting full cream milk and double cream with Almond milk). I baked it in the oven in a bain marie for 60 mins (recipe called for 45 mins) and my brulee would not set.

It turned out to be a delicious custard. Any suggestions on how I can get my almond milk version to set?

Chocolate chip cookies always turn out puffy

Also, the eggs were fridge cold. Nigella's recipe called for 1 egg plus 1 egg yolk.

Chocolate chip cookies always turn out puffy

I use Nigella's recipe from her book Kitchen. The butter is melted for this recipe? Maybe that's the secret? My cookies are crunchy out the outer sections and a bit chewy to the centre.

I use my kitchen aid to make the cookies...

Top 5 Singapore Restaurants.

Hi,
I've been reading through various posts on this board and there is such a wealth of information. I was wondering if its possible to narrow down the choices for restaurants for a first time visitor to Singapore.
Is it possible to list (to your own taste) your top 5 places to have dinner or lunch (can you specifiy its cuisine type).
I would like to try as much as I could but preferably local cuisine, as I can get most western fayre in Scotland!

Travelling to KL, Singapore and Langkawi - Advice for someone with a severe dairy allergy

Hi,
I realise that there are some folk on this forum with a wide knowledge of food from these areas. My husband and I are travelling in 6 weeks and would like to know if the foods from the hawker stalls are generally cooked in butter or is there alot of cream and cheese used?

We plan to do a bit of both - fine dining and hawker stall dining. What should I look out for? We are planning on getting some phrases transalated to say I would go into anaphalactic shock if I have any dairy products.

Other than my allergy I am a very adventurous eater. Any advice would be greatly appreciated.

Where in Arran ?

Brodick bar is excellent. Would highly recommend it. Also at the foot of Goatfell, there is a winebar, which is also good and owned by the same folk who owns Brodick Bar.
I saw someone recommend creelers..we thought it would be nice, but the decor looked like something out of the 60's and in the height of summer it was not busy, so we took cue and left.
We were there for a week in June last year, so creelers might have had an upgrade!
Also Bar Eden looked lovely, but it was completely desserted at lunchtime.

Fish and Chips - the best?

I don't know when last you've visted the Ashvale in Aberdeen, but I can honestly say that I've never had a decent quality fish supper there. The fish batter is always so soggy, and this is after eating in at the restaurant on Great Western Road. I can say the same for the chips, as I think they might have had it under a heat lamp, then lobbed it onto a plate before serving us.
My best supper is at the Anstruther Fish Bar, a 2 hr drive for us, but well worth it!

Lunch near Glengoyne distillery?

You might have to call and see, but you can try Ross Priory. Lovely setting on the banks of Loch Lomond. They normally do lunches and dinners for members only, but I think that members of the public can call in. Their 3 course dinner is outstanding and is usually around £25 per person.

question about firm silken tofu

I've used firm silken tofu for cheesecake and I did not use any cornstarch. I used 1 eggs and a table spoon of flour for 1 packet of tofu. Cheesecake firmed up fine in the fridge after baking.

What percentage of your cookbooks have you actually cooked from?

Funny you should ask that question. I have two shelves of cookbooks (probably around 20 not including my magazine subscription to BBC Good food), and although I've read through all of them, I can safely say that I have 3 of them that I use very regularly! I mean like using them at least 3/4 times a month.
My main problem is sourcing the ingredients, not really an excuse with the internet and online shopping though.

Warm Salads Ideas

I like your idea of puree of root veg! the carrot/ginger puree sounds delish. I get bored of hommous and can't really have the other dips like sour cream etc cause I have a dairy allergy.

Warm Salads Ideas

The first frost (well in my garden) is here! I've spent sometime this weekend trying to come up with easy warm salad recipes for dinner during the week. I know winter time is a time for hearty stews, but I think sometimes its a bit too hearty for dinner.
For a warm salad, I thought of having the meat just freshly cooked or warm roasted vegetables.
# 1 - Warm root vegetable salad - using a melon baller, scoop out the warm sweet potato. Then mix in with carrots, red onions & parsnips which were roasted with rosemary and honey. Mix together with some balsamic or redwine or raspberry vinegarette
#2 - Romaine lettuce and red peppers, mixed with pan fried chicken & pine nuts. Drizzle over basil oil (basil & garlic blitzed with warm olive oil)

I would love some other suggestions. (I have a few more, will post later)

I did mention to them that they need to pay attentation to service and the food, but they said that they're sorry and they're busy.
Robin Joy, this ASK is in Aberdeen :O). Who knows, the service might improve and food quality might change if there is constructive criticism made to the manager.

Chain restaurant - ASK (Italian food)

I hardly ever visit chain restaurants as I'm pretty skeptical about their food preparation procedures. Hardly ever is anything made fresh in terms of sauces (or so I'm led to believe)

I've been asking about Yo sushi as there is a new mall in the city and a few new places to eat, so I always like to try something once.

I recently visited, ASK, another 'new' restaurant at the new mall and I have to say it was not a very good first impression. The meal was less than average in terms of taste and appearance.

Service was terrible in that the waiter was standing over a patron and handing over plates. The table was big enough for him to walk around and hand the plate to the customer, not hold it over someones head.

After waiting for about 50 minutes, we asked a waitress if they forgot our order and instead of apologising and telling us the truth, she said no and that the restaurant was busy. I have to say it was not as busy as she claimed. A member of staff then came over and aplogised, but even with that said, when the meal was served, only 4 of us got our plates and my husband was left waiting for at least 10 mins before he got his meal served to him. Also, a waitress cleared half of our dishes away, got distracted and left 2 of my friends with empty plates in front of them.
My plate of rigatoni and spicy meatballs looked like something sloshed out of a tin! The pasta was way over cooked and the meatballs looked a bit suspect so I pushed them to the side of my plate. My husband had chicken in a marsala cream sauce which he said tasted as bad as it looked, so he ate only his salad.

I was thoroughly disappointed with my visit (we were there for just under 2 hrs for a 2 course meal).

Contrary to what was said in the last 2 replies, I've just been and I must admit, they were pretty darn good. This was their opening day, so maybe they went that extra mile to have the food meticulously prepared. I plan to go again.

Restaurant recs in Trinidad or Tobago

My husband and I are planning on visiting the islands hopefully in Jan/Feb '10. Was wondering if anyone visited recenltly to give some recommendations on places to eat. Not really into street food, as I doubt my stomach can handle the hot spices.
Can travel about as we will have a rented car, so distance and location is not really a problem.

Does anyone know where I can buy fresh curry leaves and bay leaves. I saw that there was a post on buying a curry leave plants, but where I live, there is no way that it would grow in my garden...i.e. cold and salty wind (I live near the coast)
I've seen the dried stuff in Tescos and Asda but I think for better flavor, I'd quite like to get the fresh stuff.

Yo Sushi

I've been there before the law changed over the summer. Back then their sushi was amazing. The sushi chef certainly has skill and it shows in the beautiful pieces he whips up.
I haven't been since the law changed as I thought that it would not be as good, but heard that he has modified the menu. Will keep you posted if I do decide to visit.

Well the harbour is right down the road, and I think most fish up here comes in from Peterhead. So I do hope that the fish is at least fresh and tasty! :O)
