i don't eat stuff i don't like, period. i don't wanna hear about rudeness toward your host. For instance, i hate peanut butter and therefore will turn down anything made with it. So it that rude? I don't think so. What i think is rude is a host having his/her ego so wrapped up in a slice of peanut butter pie that he/she would rather see me eat it than respect my palate. I would never dream of having someone eating they consider revolting just so my ego remains intact.

Is Registering for a $2,400 Espresso Maker Rude?

i think registries are a great idea... i do not have a lot of money, so a registry assures me that the money i spend on a gift will be well spent. I could never afford to have my own $2400 espresso machine but that doesn't mean that would begrudge a friend such an item and if i could be a small part of something that would be truly appreciated i would consider that money and effort well spent.

another reason your medium steak came well done is because you have someone else's steak in front of you and another person has your steak...a very frustrating situation for customer, server and cook. the customer didn't get what he ordered, a server has to deal with a rightfully annoyed customer and the cook has to recook something he cooked correctly to begin with.

@suebeehoney, so i guess when you are not feeling 100% and all smiles, you go to your boss or client and insist that you not get paid. i'm sure you hold yourself to the same standard as you do those in the service industry, right?

@northdakota, so one bad meal and you never return. Really???? If your meal is truly awful, let someone know for crying out loud. There may be a reason for it that can be remedied, but if you don't speak up, who will know? The fact is that you are going to get a lousy meal occasionally. Ya know how YOU are not perfect, well restaurants are made of people just like you and just like you they screw up occasionally.

so you feel rushed when i clear your friend's plate while your still eating????? get over it, not everything is about you. maybe i'm clearing your friend's plate because your friend doesn't want a dirty dish in his/her way. As for campers, please understand that on a busy night when you are hanging out after you have paid, you are cutting into my salary. If I have a 4 table section and you are camping out, you are reducing my earning potential by 25%. How would you like to go to work and find out you are only getting paid for 6 hours instead of the 8 hours you put in? Here's another problem campers cause: It's the end of my shift and you are still there chatting away... I can't leave until you are gone and i have cleaned the table, filled up salt/pepper/sugar, reset the table and swept up. Well that's not entirely true, I can ask if one of my coworkers can do all that for me, but that's not free, you gotta pay your coworker to clean a table he/she didn't make money on... However campers can redeem themselve by leaving more money on the table... ya know what they say time is money

the browning of the pretzel in the oven is a Maillard reaction. Maillard reactions work better in an alkaline environment. Lye which is the same thing as sodium hydroxide (NaOH), is a really strong base and can be dangerous... baking soda is a much weaker base and therefore much safer...

Only Tools Don't Tip on Takeout, and Other Rules of Gratuity You Should Know

im a waitress and i do not think you should tip well for poor service but i just want people to be aware that poor service isn't always a server's fault. Food that takes forever is usually because the kitchen has crashed. you think as a diner your're impatient for your food???... I get to wait for your food also and feel my tip drop minute by minute... i want your food out to you as badly as you do... Maybe i've disappeared for quite a while, maybe that's because i've got 8 tables spread out all over the restaurant cuz half the waitstaff didn't show up... this one has happened to me more than once, i've disappeared because the restaurant doesn't have enough silverware and i have to wash it myself (why doesn't the dishwasher do it? well maybe there is no dishwasher or maybe he just refuses to) This one is kinda my fault for poor service, but you left me a 3% tip last time for great service, so i'm not paying attention to you at the expense of my other tables.
So when i give poor service due to circumstances beyond my control, i understand why i'm not tipped well but please understand how frustrating it is to work your butt off and then be barely compensated for your effort.

Out of curiousity and at the behest of my 11 and 14 year old boys, i prepared this for a boy scout xmas dinner... all i can say is WOW... i really thought this recipe was more for shock value than anything else, but it tasted really good... got lots of compliments... i will definitely make this again :0)

What to do with cooked chicken?

i make a chicken spread, kinda like a ground up chicken salad... put chicken in food processor with some mayo, sour cream and season salt and grind up to spreading consistency. good for spreading on crackers or toast... maybe top with some chopped celery and/or dried cranberries.

Need dessert options for sandwich rehearsal lunch

This is for the traditional crowd. Applescotch Bread Pudding.... comes from Betty Crocker New Picture Cookbook of 1960something. Been making this for 30 plus years. Great for making ahead and doubles easily... so here goes:

Applescotch Bread Pudding:
4 cups soft bread cubes, (1/2 inch)...use bread like Pepperidge Farm or Arnold's white
4 cups sliced, pared cooking apples... i like golden delicious/granny smith combo
1/4 cup butter, melted
1/2 cup white sugar
1/2 cup brown sugar (packed)
1/2 teaspoon cinnamon
1/4 cup cream... whipping or heavy whipping

Heat oven to 350. Place half of bread cubes in greased 1 1/2 quart baking dish. Cover with 2 cups apples. Mix butter, sugars, cinnamon and cream. Pour half over apples. Add another layer of bread cubes and apples; Top with rest of sugar mixture. Bake 1 to 1 1/2 hours. 8 servings.

sometimes i make more of the sugar mixture than it calls for, other times not. My mom always served this with plain, unsweetend, unwhipped heavy cream poured right over it. The dessert is sweet enough, that the unsweetend liquid cream is the perfect foil.

ratgirlagogo... when you are waiting tables and you are so in the weeds that you are about to lose your mind... anything, and i mean anything, that wastes more than a millisecond of your time is considered a monumentally time-consuming chore. I did not know the meaning of busy until i started waiting tables.

Fruit Crisp...is it possible to make it healthy?

imo, there is no way to make a "sinfully good" fruit crisp in a "healthy" manner. so instead i would just accept a goodly portion of fruit crisp as a well deserved splurge. if that doesn't calm the angst, perhaps budget your calories/fat allotment so that a well made, sweet and buttery fruit crisp can fit into your diet.

Enough with the Workplace Candy!

i think some compassion on all sides would be helpful. Starting with u Fistful, people love to cook, bake and share food with those around them. Allow your coworkers the joy of sharing with others. Understand that your food issues are NOT paramount in thier minds nor are they expected to be. I bet that if you tell your coworkers about your issues, most will be willing to help you through the minefield of food. For those of you who do work with a Fistful, be aware that seduction of food is overwhelming and can be almost impossible to control. If you bake for the office, making up a small healthy treat for Fistful would be a really nice thing to do. Fistful could then share in the joy of communal eating with the rest of her/his coworkers.
For those of you who think just it's just about willpower, you are wrong. You have no idea the pull food has over some people. Up until 2 years ago, I could not say no to food. Sweets especially, were my crack, lol. I'm 5''6" and had ballooned up to 235 lbs, because i could not control my eating. Then in December 2007 i started taking the drug Adderal for adult ADD. One of the possible side effects of the drug is decrease in appetite. I have lost 70lb because i no longer desire food the way i used to. My appetite went away with my first pill. Within hours my desire for food declined dramatically. In fact, my body will be starving for food and i still don't want to eat. Whatever part of my brain that so deperately wanted to eat all the time was shut down. If i don't take the Adderal my appetite returns almost immediately. I don't understand why i cannot resist food without adderal, but it is not just from lack of willpower. Adderall is not willpower in a pill, it changes my brain so that i don't desire food. For some people, food is an addiction. For everyother addiction, you cease to take the offending substance, you can't do that with food. Food is everywhere, plentiful in America, legal and by the way, necessary for life. You can't stop eating the way you can quit taking heroin.
So if both sides would allow each other room to be who they are and help give each other what they need, i think office food will be good for everybody.

"Dirty" recipes that are crowd pleasers

this is kind of a fake black forest cake... i make brownies in a 13x9, leave them in the pan, don't cut... i top the brownie with cherry pie filling and then top the pie fillng with whipped cream and if i'm feeling ambitious garnish with chocolate curls. You can get really trashy and use a brownie mix and cool whip, and garnish with chocolate jimmies, lol. You'd be surprised how many people can't figure out what the "crust" is! Comstock "more fruit" cherry pie filling works really well. I gotta admit, i LOVE canned cherry pie filling.

just found this post. I grew up in woodlawn and was just there in august 2009. There is an Italian bakery called Artuso's on McLean Ave and what would be Martha Ave if the Bronx extended to McClean Ave. Everything is so good there. If you go in the summer, they sell hand scraped Italian ices too.

E-A-S-Y, no brainer, Party Food for 100 ?

for an easy dessert you can make black forest brownies. Make brownies in a 13x9, when cool, top with canned cherry pie filling and then top with whipped cream (or cool whip if time is an issue, do this as a last resort though). top the whole thing with chocolate curls with whatever chocolate you have. keep chilled until you serve it. might be nice to brush the brownie with kirsch before you put the pie filling on top. this always goes over really well. people have even asked me what the "crust" is. to serve, i just put a spoon in the dish and people can scoop out however much they want.

The Basics: How to Make an Icebox Cake

goyza girl, you are right. the last pic shows the way the cookies are supposed to be aligned when sliced, but the directions given will not result in this neat arrangement. And no, you are not picky, it would be awkward to slice through just whipped cream or try to slice through a single cookie. Instead, you should sandwich together, 4 or 5 cookies, and set the stack down on the cookie's edge. Make a second stack and lay it on edge, put that behind the first stack. you should now have 2 rows of cookies, as if each cookie was a soldier standing in formation, one behind the other. Continue to make stacks until all the cookies are used. Then frost log with cream. I love this dessert. I would love to get a copycat recipe of Nabisco's Famous Chocolate Cookies. Does anyone know if such a recipe exists?? As for the M&M's...2 thumbs down; the chocolate shavings....2 thumbs up.

Leaving a Massive Tip

Yowza Springs. Restaurant tables are there for paying customers, who by way of ordering food and drink support both the restaurant and the server. Once you have finished your meal and then order nothing else, you are not a paying customer anymore. Servers are typically paid $2.13/hour. Many restaurants require that servers give up part of the their tips (known as "tipping out") to hosts, busboys, bartender and others. This frequently wipes out a server's hourly wage. All a server has left are the tips for that shift. Customers that "campout" at tables without compensating for USE of the table can seriously cut into a server's wages for the shift. Your server may not have done anything for you, however, you have used up your server's income generating space, not to mention the restaurant's income generating space. Yowsa Springs, if this is what you do on a regular basis in restaurants you frequent, as a server, I can guarantee the restaurant management and staff HATE YOU. Even if they smile at you and greet you with a warm welcome, they HATE YOU. They wish you would never, ever return again. Here's a piece of advice, NEVER piss off the people who handle your food. I have seen many a server take great satisfaction in watching a crappy customer eat food that has been tampered with. Perhaps your food was thrown on the floor, picked up and served. Perhaps your food now contains various and assorted body fluids, in or on it. I'm not saying that this is an acceptable practice, however Yowza Spring, I'm sure you would agree, you get what you pay for.
