Crab Cake Help

OK long time Marylander here that hates crab cakes and crab meat in general, I think the governor actually tried to get me banned from the state, by my lovely bride adores the crab cakes I make. It has to be the chesapeake blue crab. Sorry no substitutes but we have very little to brag about here. If you start with that you will end up with a great end product. Do not put remulaud, or spicy wasabi mayo or any of that, home made tarter sauce or cocktail sauce. I know, a lot of advice from a guy that doesn't eat crab. I have fished the bay for years, and I know what they eat. 'Nuff said.

What shocked you the first time you ate it?

To your Scotch comment...a few years ago one of the big wigs in my company and I were in NYC at the Marriott in Times Square. He ordered us a couple of Johnny Walker Blue's neat and I felt like I was having my first kiss. It was so smooth and velvety. Not at all like the crap I had in bars with soda water back in college.

I went to a cooking supply store and bought a small ice cream scoop, makes ping pong sized meatballs. The have a flat bottom, but a litlle roll around and they are perfect.

King Vitamin cereal, hmmmm. The poor mans Captian Crunch. My mom would buy that because it had vitamin in the name. Oddly enough here in Maryland one of the chain grocery store named "Food Lion" sells it. I bought a box and I was dissapointed by the tast.

Omlette pan stick. Help!!

I find that if the pan is on the lighter side, with a thin base, an overheating scenerio can ruin the surface. A good way to check is to boil some water in it. If any part of the surface starts boiling tiny bubbles, that is a weakness in the surface. It indicates damage to the non stick coating.

Whole Lotta Meat

Meatballs:
3 lbs meat
2 eggs
1 c panko
montreal steak seasoning
small can of tomato paste
mix it all up, form meatballs( I use a small ice cream scoop). Place on baking rack over a baking sheet. cook at 400 untill nice and brown. perfect for freezing.

What Food Products Have Changed?

I go to a local supermarket (super fresh) and in the soda isle you can buy coke with the yellow top. It's kosher and uses sucrose as a sweetener, (good old sugar).

Any Chile Experts? I made my first batch this weekend and have some questions

My chili recipe involves a six pack of corona that you consume to the last bottle and then add that to the mixture, put it in a crockpot and eat the next day to get rid of the haqngover. I call it my "una mas cerveza chili".

Help me improve my pork chops

I love pork chops from the grill. I buy the nice thick ones, cook slowly over indirect heat. I think it is tough to marinade pork so I try to use a good seasoning during the grilling. Montral Steak is good as well as fresh squeezed lime juice.

As a side, torwards the end of grilling, I take fresh peaches pit removed, rub with a little olive oil and course pepper. When they have lovely grill marks add some bar-b-que sauce and they are an awsome side dish.
