Hopping up the bourbon trail... food, hotels, experiences we shouldn't miss?

My guy and I are attending a wedding in Texarkana, and plan to wend our way back to Chicago through Tennessee and Kentucky. The rough plan is to spend a night and half a day in Memphis, then make our way to Bardstown for a couple of nights, followed by two nights in Lexington.

We're hoping to get to all the distilleries -- I'm a sommelier, and it's a professional obligation -- and I' don't want to miss either the Civil RIghts Museum or the Mary Todd house, but otherwise, we're entirely flexible.

We're both fond of dive bars, sketchy neighborhoods, and authentic food. Please, bring on the ideas....

No Corkage "rules"

I"ve been in the restaurant business for over twenty years, on and off, mostly as a sommelier, and I'm always amazed by the blank stares I get when I offer tastes to the waiter and kitchen, or, worse, the scared look followed by some idiotic statement like, "I can't DRINK. I'm WORKING.". The 'angel's share' is such a gracious and civilized tradition, and it makes me reallly, really sad realize that it's no longer de rigueur.

No, not Jewish... I've got white trash cred from here to the nearest NASCAR track, and my mom made cream cheese, olive and walnut sandwiches all the time. Sometimes she bought this weird canned date-nut bread that was almost like dessert -- I've never thought of this before, but I adore almost anything that's salty-sweet, and I wonder if it started with those sandwiches?

You know, I've actually TRIED to make 'garlic bread' the way Mom did, and it's never right. I don't know what I"m doing wrong - maybe my garlic powder's too fresh?

I think I'm going to do meatloaf - one regular, one turkey - on white rolls. I just put the dough together and I'm waiting now for the first rise. Lettuce and tomato on the sammies, with sides of sweet potato chips and curried ketchup.

No reheating, but I think room-temp is fine. And these have to be pre-assembled and wrapped for grabbing - this is a grab-and-chow proposition. They'll be on the water when they eat 'em.

Slightly shocking Kraft dinner variation

My college favorite was mac n' cheese n' tuna n' peas. I mix up a mess of it once a year or so, when I"m in a mood, and even if it isn't real food, it's really satisfying.

Since the downturn claimed my job, I'm amping up my budget cooking skills, and I volunteered to make sandwiches for my partner's sailing crew this Sunday. I need to feed about 15 people simply, and without good refrigeration, since they'll be on the water and the extra weight and hassle of ice is better avoided.

I'd like to bake the rolls or bread, and I need to do this on the very, very cheap.

Anybody have a genius thought?
