Gefilte Fish

That shouldn't be even called gefilte fish as it is far from Jewish traditional fish.
It was always made with Carp and maybe addition of pike.
I buy a whole fish and put the flesh thru meat grinder together with onion and white bread soaked in water , add salt, pepper to taste and egg....form fish balls and drop into softly boiling stock. To make fish stock I put the bones and skin add chopped onions, sliced beets , salt, carrots and onion skin. The stock has an amazing color and taste.Simmer for about 40 min. , then place fish balls on the plate and decorate with sliced beets and carrots-makes a very colorful display as well....

I guess by the time one has to find all the ingredients it is easier to buy the ready made Shichimi Togarashi. Does the store bought spice have to be kept under refrigeration?

Cooking Liver [split from Manhattan]

I do not live in the city, but I do want to tell you how to prepare the liver.
The way I do it- I sautee onions separately...rinse off the liver and pat dry, then dust with flour put in preheated pan with hot oil and sear quickly on both sides till med brown on medium flame , then top with caramelized onions, season with salt and pepper if desired and cover for few min....Depending how thin slices are.
Better when it is still pink inside...It will soft as butter...Enjoy!

Pickled Eggplant

I made similar recipe only I used the thin sliced eggplant and used red wine vinegar instead as well as added some basil too.
Slices can be used while assembling club type chicken or turkey sandwiches.
It is always very popular in my house.

Gefilte Fish

I had watched my mother making gefilte fish as a little girl ( I am always following the same technique resulting in delicious and beautiful fish) and it was always made with carp.The head and bones were put in the pot together with stuffed slices of fish, slices of beets and carrots as well as onion peels created beautifully colored broth as well as the fish ...the vegetables then are used to decorate the plate and slices before the broth poured over it....

Braised Pork Chops and Fennel

seems it is way too long to cook pork chops....especially if they are thin cut.
Pork dries up too fast and meat becomes tough and chewy even with the addition of the sauce....
