Homemade granola for snaking in my cube at work

This is my Mom's recipe:

1 lb butter
1 tbsp vanilla
2 cups honey
½ tsp salt
2 lb rolled oats
½ cups sesame seeds
1 cups chopped nuts
2 cups grape nuts
1 lb coconut
1 cups sunflower seeds

Melt butter. Add vanilla and honey. Mix ingredients. Spread on cookie sheets and bake at 350F until golden brown.

Best advice for a novice smoker?

When I first started smoking meat, ~8 years ago, I didn't think the type of wood mattered. I smoked a turkey using mesquite. Yikes. The only thing I use mesquite for now is smoking brisket, and making bacon.

+1. I even stop adding mesquite to the fire about 6 hours in. I find that giving an entire 12-14 hours of mesquite smoke is much to strong.

BBQ Brethren is a good place to start. Serious BBQ (by Adam Perry Lang) and Smoke & Spice (Jamisons) are both excellent books.

The real trick with smoking a brisket is having control of the fire in your smoker. This is more practice than anything. Your smoker will be different from mine, and the weather outside determines the size of the fire (in the winter in Massachusetts, I put a pretty big fire in my smoker to keep the smoker at 200F).

Practice, practice, practice!

My two go-to books are Smoke & Spice, and Serious BBQ (by Adam Perry Lang). Serious BBQ is both a grilling and smoking book, and the recipes are more labour intensive, but I've made delicious meal after meal from that book.

Yep. My wife was very cold and needed to warm up.

The bread served pre-dinner was pretty dry, my wife's salad was acceptable, her scallops were slightly overcooked, but my NY strip was cooked properly (rare). We tried to stay away from exciting things on the menu, because we were pretty sure they wouldn't execute.

It's a pretty restaurant, but I wouldn't return.

What do do with a lot of saffron?

Shakshuka. We make this frequently, because it's quick to make and delicious. It's essentially a stew with tomatoes and herbs, and at the end you fry some eggs on the surface of the stew. Totally awesome.

Eat with your hands dinner party

Bo ssam is a very popular finger food in my home. You can find the article in the New York Times describing how to make it, or you can modify it and do it in a smoker (that's how we do it). But everyone is happy after a bo ssam meal.

Drink

We tried to get into Trade, it was closed. Sadly, by that point my wife was too cold to walk around anymore, so we ate in one of those hotel-ish steaky places. Food was fine, but certainly nothing special.

Pickle/Sauerkraut crock

I'm thinking about starting a sauerkraut project, and looking for a place I can get some inexpensive stoneware crocks to do the fermentation in. Does anyone have a source for these in the greater Boston area? It seems silly to order something so heavy online, and pay $20 to ship it...

Drink

Taking my wife out for cocktails tonight at Drink, then we'd like to go somewhere to eat well. We're fairly adventurous eaters, and would like to find somewhere nearby with a decent charcuterie plate, and an interesting menu. I tried to search for "Drink" on the Boston board to find other threads, sadly it's a relatively common verb on Chowhound, and I couldn't find any related threads.

Recommendations?

Thanks, all. Found it at H-Mart. Made a lovely dish out of it, braised it, peeled it, sliced it, seared it and served it on top of a lovely dressed arugula salad.

Chicken thighs

In my opinion, thighs are the best part of the chicken. Roasted or braised is awesome. I've done coq au vin with them, for example.

Interesting factoid: Most expensive part of the chicken in N. America - breast. Most expensive part of the chicken in Asia and Russia - thigh. There's a huge market in shipping thighs to Asia and breasts to America. No joke.

Arlington grocers

We recently moved to Arlington, and are trying to figure out where we want to do our weekly grocery shopping.

So far, we hate the Stop N' Shop in Arlington, the produce there is grim. The H-mart up the road in Burlington is pretty fabulous, and what they don't have, the Market Basket next door has. But traffic up in that area is hideous except very early on weekend mornings.

Where do the other Arlington Chowhounds shop? What's your favourite grocery store?

Pork belly

I need a place where I can get large slabs of pork belly (for curing into bacon). I can find it at the H-Mart in Burlington, but it's always chopped into small chunks. I want the large, flat sections of it. Any suggestions?

Vegetablarian offerings

Ok, so I am not a vegetarian. Rather, I'm kind of meatitarian. I love bbq, cured, brined, grilled, roasted meat. My mother, who is visiting us in Boston for the first time, is vegetarian. Where can we go to eat that we will both have excellent meals? We're located in Arlington, but willing to travel as far south as the North End. Somewhere with offerings that are delicious in the vegetarian area, but also offer real food (do you notice a small prejudice there? It's true, I'm prejudiced against most vegetarian offerings. I apologize to any offended).

Tryst in Arlington

We went there last night and were pretty disappointed. The fried stuff was ok (shrimp and calamari), but the sauces were pretty bland. My wife's salad was little more than iceberg lettuce with Kraft blue cheese dressing on it, and the duck tacos... Oh, the duck tacos. The duck tacos were not. good.

The servers were friendly and helpful, and the beer was cold. But this meal just wasn't all that tasty. We won't be back.
