does anyone have a good tomato soup recipe?

Serves 6
• 1 stick butter
• 2 carrots, roughly chopped
• 1 medium onion, roughly chopped
• 1 stalk celery, roughly chopped
• 1 leek, washed well, roughly chopped
• 3/4 teaspoon salt, divided
• 1/4 teaspoon ground black pepper
• 3 cloves garlic, minced
• 1/3 cup brown sugar
• 3/4 cup malt vinegar
• 1 (12-ounce) can tomato paste
• 1/2 cup all-purpose flour
• 5 cups low-sodium vegetable stock
• 1 (14.5-ounce) can crushed tomatoes
• 1 cup heavy cream
• 1/4 cup chopped basil
• Garnish: cracked black pepper, sour cream, and croutons

1. Melt butter in a large stockpot over medium heat until foamy. Add carrots, onion, and celery. Season with 1/4 teaspoon salt and pepper. Sauté until onions are translucent, about 6 to 8 minutes. Add garlic, and sauté until fragrant, about 2 minutes.
2. Add tomato paste to sautéed vegetables. Cook until mixture is thick and slightly dry, about 3 minutes, stirring often. Sprinkle flour over mixture, stirring to combine. Cook, stirring constantly, for 3 minutes.
3. Slowly pour in vegetable stock, whisking until smooth. Add crushed tomatoes and remaining 1/2 teaspoon salt, whisking to combine. Cover, and increase heat to high; bring to a boil. Reduce heat to medium-low, and simmer for 40 minutes, occasionally
whisking and scraping bottom of pot to keep from scalding.
4. Meanwhile, combine brown sugar and vinegar in a small saucepan over medium heat. Simmer, stirring occasionally, until mixture is syrupy and reduced by half, about 10 minutes. Set aside.
5. Add cream and basil to soup, stirring to combine. Add reserved sugar-vinegar mixture, stirring to combine. Purée soup in the pot using a hand blender; alternatively, puree soup in batches with a regular blender. Pour pureed soup through a fine-mesh sieve into a
separate stockpot or serving bowl.
6. Garnish each serving with cracked black pepper, sour cream, and croutons.

Best Coconut Milk Substitute?

I'm making Mexican cocoa and cayenne pepper cupcakes (DELICIOUS) and have my twins down for a nap. I have EVERYTHING but the coconut milk. I can't get to the grocery store to get it so I'm going to attempt to use evaporated milk with a little coconut! We'll see how it turns out!

Help! I Need A Traditional Southern Cornbread Recipe for My Cast Iron Skillet

I'm going to try the martha white recipe w/ a little adaption: I'm going to add some actual corn and about a tablespoon honey. I'm as southern as they come and love ALL forms of cornbread. I'm visiting Tifton, GA and just bought some fresh cornmeal and honey at the Agrorama museum

Adults at a childrens birthday party

As a Mom planning a birthday party for our almost two year old twins, I say DECLINE!!! I wouldn't be offended in the LEAST bit if people declined. I declined most children's birthday parties until I've had my own for the same reasons. I've even declined since then b/c of the drive. If people get upset, it's their problem not yours. Just rsvp! You don't need a reason. In fact, I send out email addresses as the way for people to rsvp so they won't feel bad saying no! It's expensive and I just went to a house yesterday and her fridge was covered in birthay party invites. Pick those you're the closest to and go! We are only inviting little tots that our two play with and family.

I'm loving reading this!!!!!! I hope more posts come soon! I'm shooting for the 7-8 roasted chickens and veggies, rice, fresh bread, and dessert!

This is sounding perfect b/c in addition to my 20 adults, there are 6-8 children under 10. What child does not like chicken? Add a big bowl of rice............and maybe a Oreo Dream Dessert?

Fabulous recipe and great idea. Could you post another one of your meals to feed up to thirty? You must have a good stock of them! I'm going on vacation with 19 friends and we are each going to cook one night. I loved the phyllo idea and wanted another recipe or two to choose from? Since yours are tried and true, I'd really value your input.
