Tucson Suggestions? Looking Specifically For...

Terra Cotta has been gone for I would guess 7-8 years. Janos has a place on 6th beneath the Etherton Gallery. The food scene is not worth writing about other than El Nene which has Sonoran Dogs that are in a class by themselves. Enjoy the desert, but the food is better in San Diego.

Anything Chowish between Albuquerque and Roswell (maybe via Socorro)?

The Socorro Grill is very good. Nice looking room, good service, good menu. The salmon sandwich was excellent. We eat there once a year without fail.

TOSCA [San Francisco]

There was a wonderful article about TOSCA in the NYT on 1/8/14, but I was confused about a dish. The article speaks of Lumanoni (shells) with prosciutto, radicchio and lemon cream, but the photograph of the dish in the slide show seems to show shells in a butter sauce and little else and then the TOSCA menu describes it as lumaconi with prosciutto, trevisio (radicchio) lemon-breadcrumbs. Does any here know what the dish really is? The first description appeals to me, but I have not been able to find a recipe with those ingredients nor has the restaurant responded to an email. Thanks.

"Press" is to put it mildly. BBC has gotten some deservedly bad press. The placed is as loud as the proverbial boiler factory when busy, they ask for picture ID in the new Arizona tradition when you use a credit card, and the last time I was there they left the ham out of a ham omelette. Go to the Good Egg instead.

I had a call from Ron Raska, "the everyday gourmet" this evening with a 4.5 qt saucepan for sale. So he is still around and there are still pieces available. The stuff is the best mid-century design. I think I now have a complete set.

I am also looking forward to improvements. I hope you are more open to them than "The Chowhound Team." The site is violently over moderated. It is a classic case of mission creep, if moderation is good, more moderation is better. We have gotten to a point where the moderation has throttled the discussion. We have gotten to the stage of "If I wouldn't have said that, it gets deleted."

Vintage Cuisinart food processors

I have a CFP9 that has been in constant use since 1975. I ordered the third bowl yesterday from Gourmet Depot in San Francisco. $47. I also have a complete set of discs. I see no reason to have anything else. I replaced the while cover for the motor spindle a few years ago for a couple of bucks. Look under Magimix for parts and accessories.

Wearever Modern Method

They are listed as "USED." My experience with Ebay is not positive and so I have not used it in years. I need to find my data or reregister to contact the vendor. But I would really like to have a 4.5 qt saucepan which isn't part of the set being offered. The only way I know it exists is because it is mentioned in the cookbook. We have added to our set over the years. It is truly gorgeous mid century design. I am always surprised it does't have more of a following. Maybe because the aluminum doesn't age well.

Understood. Salt, pepper, and olive oil is all you need to cook a steak. But sometimes the steak isn't as good as it might be and I resort to HP (sorry), but I would not use it on a good steak well cooked

Where can I find just plain chicken stock?

Stock and Broth are not the same thing. Marcella Hazan's points this out in her cookbooks and goes on to say Broth is used in Italian cooking but Stock is not. If you ask for Stock you should expect to find "other ingredients" indeed you should be disappointed if you don't.

I thought your only criteria was the taste of the steak, but you mention service and ambience. I hope that means you agree with me in principle that it is the totality of the experience by which one should judge a restaurant, even if you don't agree with me about G&G. I think that G&G is an experience that is best appreciated by Chicagoans, the same way New Yorkers can best appreciate their brand of restaurant.

Wearever Modern Method

I am an enormous fan of Wearever Modern Method cookware. The aluminum stuff with the stainless steel liner. I know it was in production into the early '70s but I would like to know when production ceased. I was told that it was designed by Harley Earl, the first Vice President of Design at GM. Can anyone confirm or deny that. There used to be a fellow in Ohio who went by the d/b/a of "The Everyday Gourmet" who would repair and sometimes be able to replace Modern Method pieces, does anyone know if he is still around. Lastly, does anyone ever see pieces for sale. I could use the largest sauce pan. Thanks.

Edit, maybe I should specify that Modern Method is the series with the straight sides that taper inward toward the top, has round knobs with a starburst pattern in the tops, and has small metal hanging loops at the ends of the handles.

TUCSON MUSSELS

Tucson is indeed the end of the food chain. Most folks here who can travel compare notes on foodstuffs they bring back from other places. Like superfine sugar which MAY be available in Tucson during the Holidays, but not otherwise. But BlueFin has mussels and they are OK, but not more than that. I find the quality of seafood at BlueFin to be less than the best. Their Ahi is particularly poor. You can get mussels in a better supermarket like Albertson's or A.J.'s, but the dead to alive ratio is not good. We wind up taking the dead ones back there are so many. You are right to stick to restaurants in this case.

I thought the OP asked about Chicago. The discussion of Luger's is just typically narcissistic NYC. G&G is the choice because it IS Chicago. I have been eating there since 1970, and the comments about attitude are correct, but irrelevant. Its the attitude that makes it Chicago. If you are somebody you get attention, if not, well, wait your turn. That's the way Chicago operates. The steaks are tremendous and you can have a truly memorable dining experience, as long as you realize there are a lot of factors that make for a truly memorable meal. There are some restaurants that define their city and visa-versa. Like "21" when I was in college. But in any event you are not going to get a table for 12-18, you aren't even going to get a table on the first floor, you aren't even going to get a table.

StarrPass is not my favorite. Try a locally based operation that speaks of Tucson. The Gold Room at Westward Look is good. Quiet and friendly. The Grill at Hacienda del Sol has always been good. The style has changed over time, but still in the running. The Arizona Inn is classic Tucson at its best. The dining room is beautiful, the service is old fashioned, and we have always been pleased with the food. I put the Westin, and Loews in the same category as StarrPass. They could be anywhere.

I would have thought it analogous to buying tea from Fortnum and Mason or preserves from Fauchon's in the US. Maybe its just easiest to have someone passing thru LHR pick some up. Thanks.

Tucson is very spread out, and resources are limited. We drove 12 miles to A.J's. this week to pick up a BD cake. They are quite good, and nicer than you will easily find elsewhere.

Harrod's Tea

I picked up a tin of Harrod's Tea at LHR which my dearly beloved confiscated for a gift. I have searched the www looking for a US source without success. Harrods will do mail order but the cost is prohibitive for me. I can't believe that Harrod's Tea (any variety) is not available in the US. Does anyone know of of US vendor. Thanks.
