I love the idea of having a fresh/bright moment to the meal but I tried to make a gremolata once for some pork and it was just bitter unpleasantness. Did I do something wrong?

Oh, good call on the puree. I think that would word wonderfully in place of heavy grits. Maybe with some wild mushrooms sprinkled on top?

Loving your enthusiasm.
1. I went with duck fat because the new little gourmet shop that I found only carries duck, not pork. I figured it would just add a different dimension of flavor. Also, if you are in DC, go to Seasonal Pantry. 90% of the the products are made right there by the chef/owner and such amazing prices.
2. I like the pomegranate idea (cornichons make me uncomfortable).
3. I have thought about that. It seems like such a sin not to.

Hello Foodie Friends.
My friends and I have created a tradition of escaping our families late after Thanksgiving dinner to meet and spend the weekend cooking (and drinking). We are on our fifth year and we try to up the kitchen adventure each year. Someday we might be able to top the braised short ribs we did the third year.
In an attempt we are going to try doing pork shanks this year. I was able to get my hands on a good amount of duck fat from a local gourmet shop with the hope of doing a confit with the shanks.
This is where you all come in. We have never done a confit before, so any tips and thoughts are GREATLY appreciated. From pans to seasoning, I'm all open.
Also, what do you recommend to go with it? I was thinking wild mushrooms and maybe a bed of grits. I would love to add an unexpected or simple and fresh side or salad to make us feel less guilty for the confit.
Please don't be shy and I look forward to hearing all of your ideas.
Oh, and how could I forget. Wine pairing?

Can't find the best Indian food I have ever had
So I posted this question on a few other food sites with no luck.
My partner and I got in a cab down town and asked to be taken to an Indian restaurant. The driver asked if we wanted real Indian. Of course!
Not sure where he took us, but it really was not a long cab ride. We walked into the restaurant; hole in the wall kinda-vibe, no decor, in fact I am pretty sure it was glazed cinder-blocks walls and pic-nick tables, like no frills. When I walked to the bathroom, the side door was open and there was even an old dude with a beard to the ground, stirring a giant pot of lentils. We walked to the counter, ordered with some great suggestions, took our number and sat down. When we asked if they served beer, he said "Sure, go out the door, walk to the corner, buy a beer and bring it back."
BEST INDIAN FOOD EVER. I completely forgot my boyfriend was sitting there. And totally cheap.
Of course we can't remember the name or where it was. Help?
(on a later trip to the city, some folks told us it was a local chain with a sister in the Haight. We tried that one and it wasn't quite as good.)
Please help! We are headed back this week and REALLY want to find it since the Indian food in DC is horrible.
