Substituting ground (what?) for ground beef

I agree with Gio on the suggestion of bison/buffalo, though in my experience ground chicken has more flavor than ground turkey.

I'm writing an article reviewing cookbooks for newlyweds for a regional wedding magazine. As a sidebar to the article (i.e. bullet points), I'd like to include cooking tips for newlyweds/novice cooks. What sage (!) but general tips would you pass along to those not-in-the-know?

Don't know where you live, but if you've never been to a Trader Joe's, it's definitely worth the trip. There's one in Sandy Springs and one in Midtown.

Restaurant Eugene is wonderful. Check out restauranteugene.com for their menus. Chef Linton Hopkins is on the ballot for the James Beard award for best chef Southeast.

Make sure to stop at a roadside stand on the way to Steeplechase for some boiled peanuts. Steeplechase is always a blast -- I've heard they even have horses there!

Thanks, Alice. Fun restaurant supply stores sound great. More info on those, please? I'm traveling with my parents -- they are 78 and 81, but still quite into good food and wine and getting out and about. Would that influence your suggestions? Checked out Ritual Tavern's website, Josh. Am sure I'd love it but not for my parents.

I could go either way on this one. I live in a resort community, which makes it kind of a different situation. In resort communities, people in the hospitality business take care of their own. When I lived in Aspen, all the bartenders knew each other and didn't charge each other. I lucked out on that one because I dated a bartender and rarely got charged for anything -- but tipped huge. My regular hangout where I live now takes good care of regulars for many reasons. We come in several times a week, we tip well and we treat out-of-towners like welcome visitors, not tourists, so they want to come back. Out of the resort context, if I were a regular somewhere and had more than a couple drinks a few times a week and didn't get comped anything, I'd probably feel a little insulted.

What do you do with the leftover egg whites, or yolks?

My mother always made custard from the leftover yolks from an angel food cake (my brother's choice for his birthday cake). Last time my best friend was down, she threw out the yolks after making her kids egg white breakfast -- could've wrung her neck!

They have them in the freezer at the Asian market that's on the left about a 1/2 mile before the Dekalb Farmers Market. Not sure if they have fresh or not.
