Duck confit with grilled artichoke hearts- help me finish this dish

I agree - potatoes fried in duck fat!

Substituting ground (what?) for ground beef

I agree with Gio on the suggestion of bison/buffalo, though in my experience ground chicken has more flavor than ground turkey.

Rick Bayless carnitas

Cannot for the life of me find the Rick Bayless carnitas recipe that calls for cinnamon in the braising liquid. Anyone have it, please?

Cauliflower? Ummm... Yummmm!

I'm addicted to pickled cauliflower. It's the first thing I pick out of my jar of giardiniera. Should probably make it myself!

Deep fried fennel

Scratch that - hadn't noticed the part about it being finely shredded, but I'm sure you can find a similar onion recipe and just sub the fennel.

Deep fried fennel

Sounds good. Find a good onion ring recipe and use it as a guideline for temp and cooking time.

Cooking tips for newlyweds

Thanks for all the input, everyone!

Cooking tips for newlyweds

I'm writing an article reviewing cookbooks for newlyweds for a regional wedding magazine. As a sidebar to the article (i.e. bullet points), I'd like to include cooking tips for newlyweds/novice cooks. What sage (!) but general tips would you pass along to those not-in-the-know?

Foodies must visit places in ATL

Don't know where you live, but if you've never been to a Trader Joe's, it's definitely worth the trip. There's one in Sandy Springs and one in Midtown.

Food Network Chefs

Totally agree with jfood's puke-a-thons, but would have to add Emeril to that list.

Must eat places in Atlanta

Restaurant Eugene is wonderful. Check out restauranteugene.com for their menus. Chef Linton Hopkins is on the ballot for the James Beard award for best chef Southeast.

Make sure to stop at a roadside stand on the way to Steeplechase for some boiled peanuts. Steeplechase is always a blast -- I've heard they even have horses there!

Best Fried Chicken in Atlanta

If you go to Matthew's, be sure to get some cobbler.

Favorite Canned Soup(s)

Love Scotch Broth! It and Chicken & Stars take me waaaay back.

Food shops in San Diego

Thanks, Alice. Fun restaurant supply stores sound great. More info on those, please? I'm traveling with my parents -- they are 78 and 81, but still quite into good food and wine and getting out and about. Would that influence your suggestions? Checked out Ritual Tavern's website, Josh. Am sure I'd love it but not for my parents.

Food shops in San Diego

Thanks. Great for shopping, lunching or both?

Food shops in San Diego

Staying at the Manchester Grand Hyatt and would love to know of any can't-miss kitchen or food shops in the area - particulary anywhere I could find matcha powder. Also, going to Kemosabe tonight -- good choice?

Denver Pizza

Pasquini's on Broadway

Sacha Inchi in Atlanta

Was hoping I could find it somewhere I could poke around for other fun food finds, but there is always online -- thanks! Maybe some kind soul and fellow CH will know something...

Sacha Inchi in Atlanta

Anyone know where to find sacha inchi -- the Peruvian wonder oil -- in Atlanta?

Deviled Eggs with a flair for New Year's Eve

The avocado goes well with shrimp, too.

Need Help with Appetizers

Some kind of pear or cranberry and honey concoction would be good with the scones.

home made almond Nougat

The pistachio torrone recipe in the December issue of Gourmet (not sure if it's on their website yet) looks really good, and it calls for almond extract.

Regional Cakes

Don't forget red velvet cake and Coca-Cola cake.

comped drinks

I could go either way on this one. I live in a resort community, which makes it kind of a different situation. In resort communities, people in the hospitality business take care of their own. When I lived in Aspen, all the bartenders knew each other and didn't charge each other. I lucked out on that one because I dated a bartender and rarely got charged for anything -- but tipped huge. My regular hangout where I live now takes good care of regulars for many reasons. We come in several times a week, we tip well and we treat out-of-towners like welcome visitors, not tourists, so they want to come back. Out of the resort context, if I were a regular somewhere and had more than a couple drinks a few times a week and didn't get comped anything, I'd probably feel a little insulted.

What do you do with the leftover egg whites, or yolks?

My mother always made custard from the leftover yolks from an angel food cake (my brother's choice for his birthday cake). Last time my best friend was down, she threw out the yolks after making her kids egg white breakfast -- could've wrung her neck!

Kaffir Lime leaves in Atlanta?

They have them in the freezer at the Asian market that's on the left about a 1/2 mile before the Dekalb Farmers Market. Not sure if they have fresh or not.

Bloody Mary Mix

My local grocery store carries Zing Zang -- have you looked around?

Substitute for Mustard Greens?

You could always try frozen mustard greens -- just squeeze out the liquid after thawing.

Food Quests

If you're ever in the area, try Ybor City near Tampa.

Hot sauce - What do you have in the house

Don't make wings myself, but have never had them taste this buttery. Maybe they just use more than usually called for.
