Pork Tenderloin How long in the fridge?

I bought a two pack of Pork Tenderloins Saturday. They were frozen and Cryovac packed. Packed on date of 5-29 and sell by 6-3, there was no use by. I put them in the fridge when I got home with the intent of cooking Sunday, but it didn't happen. I will cook them this weekend. Should I refreeze them, or will they be ok in the fridge until the? I've read a lot of stuff on the net, and it's all over the place. I've read anywhere from 3 days max in the fridge, to three months. Thanks, Hounds.

Popeye s VS KFC

Popeyes spicy chicken blows KFC away. Pieces may be smaller, but I'll take quality over quantity. Red beans and rice is better than any KFC side(IMO) but I would also take the cajun mashed over KFC's mashed.

Must eat places in KC? Need some suggestions.

Haven't been for a few years, but when I did go I left Des Moines and didn't stop until I hit LC's for burnt ends. No stops includes red lights, police, bathroom breaks, it was, and probably still is, that good. Strouds for the fried chicken. The Peanut for wings and Bacon sandwiches. Like I said, It's been some years since I've been, so I don't know if I'm recommending, or reminiscing.
I should add that LC's is probably not a take the kids place depending on how old they are. Small, cramped when they are busy, and a little greasy everywhere due to the smoke. Not much parking, bars on the windows, the kinda place where you expect to find the best Q. Get it to go, sauce on the side.

Will Chowhound ever be a major player in food reviews and discussion

I wish I knew the answer to your question. I've been here since the late 90's, and it just keeps getting weaker. It has always been my go to for info when traveling, but anymore it just doesn't seem to have the participation to be relevant. A few years ago if you asked for KC BBQ info, you would get 100 post discussing the topic. Now you are lucky to get any. My city, Des Moines,Ia, has nothing to offer anymore. It seems that people no longer want to enter into discussions of food, they prefer to just look at a star rating and believe it. I think it could return to to what it once was if it was properly promoted. CNET needs to contact past contributers and ask why they left. They seem content to survive on the number of hits, not the quality of content.

Popeyes Love

Went to Popeyes for the Red Stick tackle box. 4 chicken strips marinated in tabasco and cayenne pepper, fries and a biscuit for 3.99.
This is a seriously good deal. Chicken strips went a bit over 4 ounces total, and they were not overbreaded. They let me pick my side, red beans and rice of course. Strips take a few seconds to hit, but they are spicy, and damn tasty. If you have a Popeyes near, it's 4 bucks well spent.

Thoughts on Fresh Market selection?

The Fresh Market is opening 2 stores in Des Moines,Ia. After reading these post I would think there will be 2 new buildings for lease here soon. If they really come in with select grade beef, they should talk to Albertsons about how well that worked here. It's Iowa. We know beef. They are opening one very close to to a locally owned store selling locally sourced beef and produce. I'll take a look, but what I'm hearing doesn't bode well for them.

Price Chopper bought Dahls stores in Des Moines, and will be converting them to Price Chopper. How are the deli items? Prices? Customer service? Dahls was an institution here. Just wondering what we have to look forward to.

Sadness is part of life. I agree with you that seeing the post of recently deceased people I admired here is sad, but after some time passes, and I come across some of those old post, it makes me happy to remember them, and the knowledge and humor they were so kind to share with us.

Is Chowhound dead?

I miss the comprehensive reviews. Used to read them about anyplace from anywhere. Felt like I had eaten at a million places i would never be able to go. Reviews are few and far between now. Or maybe I just need to click and scroll a lot more. Not sure I'm ever gonna do that. Maybe a Reviews board would be good. Probably not. I don't know, it's just so regional anymore. Hard to satisfy my "what's the world like outside of where I live" fascination. Glad I don't have to run this place.

No, you don't. And I miss that.

Old dog.....new trick?

Preheat cast iron skillet on high heat for 10 minutes. Room temp steak seasoned with salt and pepper. 1 inch thick I do for 2.5 minutes a side. Remove and plate. let rest for 5 minutes. Perfect.

Diners Drive-ins and Dives

Guy was in Des Moines a month or so ago. He did an episode from an old drive in that I've known for decades. It showed the owner slicing and pounding out pork to make pork tenderloin sandwiches. Reality is that they haven't done that for years. They use frozen Sysco loins. Oh, and you won't see car hops on roller skates either. Disappointed that they staged it.

It has to be run by someone that understands it. That clearly isn't happening. Jim created it, and is likely the only one who can save it. If I was him I would let it die, and recreate it elsewhere.

Batali had my favorite line. I don't remember the secret ingredient, but his advice with it was, and this is probably not verbatim, When faced with an unfamiliar ingredient, batter and deep fry it.

Your most delicious and uncanny ways to eat Spam?

I go with 8 slices to a can. fried golden in the skillet, 4 to a sandwich, which is white bread with a hefty smear of Hellmans.
I have some new ideas, thanks to this thread.
Slightly off topic, have you tried the "new" flavors? I tried the Teriyaki. It was a sin and the person that developed it should be in spam jail. One bite, them into the trash. My dog wouldn't eat it.
Black pepper version was ok. I have a Jalepeno in the cupboard. I look at it and think, Why?
