nightshade, great job! those look so neat and delicious. i like the empanada style, too! isn't everything better wrapped in dough of some sort? LOL. it is nice to find a re-purpose for the leftover beef roast. (i usually end up making a hash with potatoes and onions, but you've given me a good idea here).

i was looking at the "canister" doughs yesterday to see if i could find the "french loaf" one, and i did find it from pillsbury. i've been noodling around the recipe idea that uses it to make stromboli (or what one recipe called "stuffed bread"). http://www.tasteofhome.com/Recipes/Spiral-Stromboli

hi nightshade, my lebanese friend makes a version of these meat pies, cheating by using pillsbury crescent dough. they are nice size as snacks. very satisfying to eat, too. ;-).

i'd use the za'atar as a substitute for the listed herbs.

za'atar is primarily thyme, in any event. so, in general, anywhere you'd use thyme is a good place for za'atar. using it in salad dressing is nice, too.

quickie flatbread: brush olive oil on tortilla, sprinkle with za'atar & bake…et voilá! (even can microwave!) you can also bake pillsbury dough like the tortilla. you can also do roll-ups & bake. brush outside with olive oil. nice cocktail snackie.. (would be good with some goat cheese, too).

I was searching for the word "Mediterranean" and Google's new search protocols must've done their job; one of the first results was "Fairouz Mediterranean Cafe" in Falls Church. It is over near Bailey's Crossroads. http://www.fairouzcafe.com/menu.html

It is a cafe and hookah bar. Which one is the priority there? If it is good food, I'd love to visit, but not if it is always smoky. They have a Sunday buffet for anything off their menu for only $12.95. (And is it a buffet proper, or do you order?).

it is all about the rubbery texture, as there was not really much flavor other than the sauce. mr. alka liked it, and i found it just fine -- esp, if i didn't think of how it looks in the wild. ;-).

New (sorta) pizza place in Falls Church?

paisano's is not a neapolitan crust. we still enjoyed their pizza and stromboli from the falls church spot. their dipping sauce for the garlic knots (as well as the knots themselves) was really outstanding. (and we were NOT fans of garlic knots, but i am very picky about sauces.).

as to the OT, i think it is orso that is the one in question. we had a nice one last year with the ramps and fresh egg. i prefer pupatella, because i think it is a little less expensive, and i can get a burrata platter there.

the profile at orso is charred edges and bottom, but very thin and weak crust in the middle…even to the point of soggy. pupatella is similar, but a little less soggy, IMO.

thanks. i had already googled images. what i'm seeking is one cleaned and unadorned with sauce, prepped to go into a dish. of course i have learned there are many different varieties, too.

can you show me images of any of the sea cucumber before it goes into such a dish?
how about the dried cuttlefish?
would a prepared sea cucumber section ever resemble a pale creamy large flat mushroom with a firmer "bite"?

we still have not gone for dim sum!

we have gone here several times in the evening. the people are friendly, the food is good, and i will give details later.

short story, we went last night and it was pretty busy. anyway…the roast pork is really nice. crispy skin! we think the roast pork is better than x.o. duck is even. (LOL). the fried wontons stink -- 'cause they are just for that purpose and no flavor. xo still has better soup wontons, fyi. learned that the soup wontons are not the ones that they use for fried. my bad, i guess.. that was an outlier for me, anyway, because i just wanted something crunchy. LOL.

chow foon contest -- xo has better chow foon, but not by much. i can get xo sauce chow foon with fresh noodles at xo -- and not at this place. this place's version is still well cooked with wok hei but not with the best seasonings i find at xo. their noodles here are not the fresh fresh.(which means i think that they are more fresh cut from sheets at xo taste). however their beef chow foon dry fried is really good. < i've photographed the noodles to see if my recollection is correct. i think x.o has more "fresh" chow foon">

last night had the #1 chef specialty… dried shrimp dried squid….will report more later, but the sauce is made with dry scallop and dried shrimp…. and the lotus root was fantastic (crisp,flavorful)…mushrooms (or at least i think so.. they were BEAUTIFUL)…squid…..celery….some mushroom… it was primarily squid (which could have been more tender, frankly)
wanting to check out if there was abalone, cuttlefish (i THINK). in any event, the sauce is great; the stir -fry is great. we wanted to eat more, but i was into my "shrimp ball" which is really just fried shrimp without the head. it was better the night that the place was not slammed with diners. it is prepped like salt and pepper shrimp, with the nice chilies on top.

they WANT to help, and are so friendly. nice place that we will go to a lot! i think we were the only non-chinese in there (except for a couple of families with white guys, asian gals)**. so…anyway, my husbsand spent time in hong kong and said that this reminds him so much of a hong kong restaurant. he loves the atmosphere and the food.

*** please don't call me racist because we like to see who is going to an ethnic restaurant.
