glad you liked it. Yes, in a suitcase would not be ideal. Perhaps you could try butterscotch chips or something along those lines. I actually despise white chocolate, but in this it is fine, you don't 'taste' white chocolate, it is just adds creamy bits.

Will you be up at the lake or down in town? If you are up at the lake, while I cannot comment on the actual food, the pub at the Chateau has a lovely outdoor patio with amazing views, I would go there even just for a sandwich.

yup, save on foods has them pretty regularly. Also give Care-it Urban deli a try out in the west end, if he doesn't have pretty sure he could get. Assuming they are the same as when I moved away 2 years ago.

agree with many above, but especially roasting, it really sweetens them. I do packages with carrots on the bbq.
also grate up and throw into a traditional coleslaw, she will hardly know they are there.

@asperGirl, what ratio of stock/rice do you use for your brown rice risotto? Do you toast your rice first (a al Batali?), most of the brown rice recipes I found seem to do this.

This Caramel Apple cake stays moist for days. I always get asked for the recipe. I have taken it camping many times and even warmed it up over the campfire (not necessary though, it is just as good cold)

use your rice cooker, perfect every time. I think you might be right that your quinoa might be partly to blame.
ISO brand of good, whole wheat pasta
I actually prefer (and digest better) the Kamut pasta (Kamut is just an ancient strain of wheat). Artisan brand makes most pasta shapes. I can find it at most supermarkets now. Not sure if it is Canadian or US though.

I agree with all of the above. I have one roasting pan that is old, really old and well seasoned. My new roasting pan doesn't do them right, they totally stick. Let them cook longer than you think too.
I have tried many different potatoes and find a yukon gold works better than russet. The larger red work too, and I always leave the skin on.
Make sure you use an oil for high heat or it will just smoke and burn away. Canola works great for me.

I do them all the time. I cut them fairly thick, a healthy glug of canola to coat them all thoroughly and cook at a high heat (425 or 450). they take about 20 mins, make sure you give them a flip a few times.
Looking for caponata recipe
I had the most amazing caponata while I was in Rome. It was the first one I ever had so I cannot actually speak to it authenticity, knowing that this is a traditional Sicilian dish. The amazing part is that my SO hates eggplant, capers and olives, but gobbled this stuff up. I have looked through a lot of recipes and they vary quite a bit. The one I had was definitely on the sweet side, I cannot recall if there were raisins or currants in it.
Has anyone had success with a sweeter, very well stewed, version of the dish?
tomato paste in tubes - storage
excellent, thank you this is just what I was hoping for. I did a double check, mine has not 'expiry date' at all, just says to consume within 20 days. I will ignore and I am sure it will be totally fine :)

I brought back some tomato paste in tubes from Italy. Thinking that this was the solution to all my woes about not using up a whole can, then trying to freeze the rest.
after opening my first tube I realized it says use with 2 weeks of opening! Grrrr. Now I know that this is still a long time compared to an open can, but it is also much bigger than a can.
Does anyone have any thoughts on the validity of this? I really believe many manufactures are putting best before dates, not expiry dates, on food items in an attempt to make you have to purchase more often. Shouldn't my tomato paste tube last as long as many of the other condiments in my fridge?
I was debating tossing the whole tube in the freezer, then when I need it, thaw it just enough to squeeze some out and then refreeze.

We were told the same thing about the pasta, we had it with truffle. I assumed it was because of the truffles, but they shaved a (small) whole one each. So I don't know why it was for 2. It was not on the menu, but rather the specials board.

Of course I am missing the food terribly now that I am home. I will try and replicate some things in my own kitchen, lacking some of the ingredients I am sure.

Rome-- lunch near termini and final dinner
L'asino d'oro is only one stop away (Cavour on Blue route) and a short walk from the station, or probably about a 15 min walk from Termini itself. They have a set menu at lunch for 12eu, it is delicious and will be quick.
