+1- couldn't handle it, if I ever saw Jersey Shores I'd probably go running for the remote just as fast. It really, really grosses me out, and that's just the intro.

Slightly stinky chicken... Am I crazy or is it okay?

If you give the dog some yogurt in its food every day and if you're inclined, some other probiotics occasionally, too, your dog won't have gas after a few weeks. i had three dogs at one time, two of them old and one a German Shepherd, and they never had gas, or if they did, it didn't smell. I'm quite serious about that- it works like a miracle.

Where to buy juniper berry in Tucson?

There's what I thought was a huge juniper tree at work, but when I pick the berries off it and crush them I don't smell a thing. What else looks like junipers- arborvitae, maybe? This thing is a couple of stories tall

Tell me about tofu skin

Well, I wasn't really looking for recipes, more like how to rehydrate the dried ones and what other people put in them. Thanks- I didn't know you could get them fresh. I will definitely look up bean curd rolls. Those little tofu skin rolls at dim sum are one of my favorites.

I love celery raw and can eat an obscene amount of it, but I odn't like it cooked in dishes AT ALL.
Same thing with green bell peppers. That's all you can taste when it's there.

I was getting ready to say that taro and red lettuce (except for radicchio) were the only vegetables I didn't like, but I just saw spaghetti squash and chayotes mentioned and I really think both of those are a waste of whatever power it takes to prepare.

Wow. I go to the u-pick farms an hour from my house because they farm better than we do here- I eat almost as much okra raw off the plant as I put in my bucket. It's so good.
The one time I had a taro cake it tasted like saliva. Never tried it after that.

Tell me about tofu skin

At dim sum, the tofu skin dish is one of my very favorite dishes. I was watching Chopped, I think, and one of the ingredients was tofu skin, it looked like dried sheets like rice paper sheets, and none of the chefs had any idea what to do with them. What is the best way of preparing them for a dish, and by the way, does anybody have any recipes for them as a wrapper?

I htink you're looking for villains that aren't there. Aside from some Chinese smoked salt I bought at an Asian grocery once (smelled like burning creosote so I tossed it), salt is pretty much just salt, maybe with some local flavor or minerals hitchhiking in.

I whirl some ground anchovies or anchovy paste into the tomato sauce if I have some
weedlie-weedlies around. They can't tell there are anchovies in it, but they get the umami blast, and I know it's there.

What did you have for lunch today?

I had a cheeseburger at the cafeteria. They're one of the best things they have on a daily basis. I put leaf lettuce, tomato, pickle chips, mustard, and ketchup on it, and salted and peppered it. Sesame seed bun that they grill for a few seconds just till the cut edges are browned. I could get a better burger, but not on my half-hour lunch, and the price is crazy-cheap for the quality. I was a happy camper.

This is really easy and tasty. Add a big handful of chopped cilantro and toss it with a raspberry viniagrette and a lot of pepper, plus some salt.

BTW- from Vail to downtown Tucson is quite a commute for this old Tucson native, but then i'm spoiled, have lived within two miles of work for the last 26 years.

Absolutely. People can begin to think that whatever they do is clean if they're wearing gloves. I listened to a cafeteria supervisor at work talking to a new employee. The conversation went something like this- "...and then after you take out the trash to the dumpster you have to change gloves." "Why" " Because you had your hands on the trash." "Oh" People unused to wearing gloves get some strange ideas about hygeine and think that because they're gloved that everything they touch is clean .
