Confused about gelato vs. ice cream

"gelato" is a general term for any sort of frozen milk or cream-based dessert treat in italian (much like "biscotti" really just means cookie).

but gelato is denser than ice cream because it has much less air in it (a different freezing process is used when making it). it can be made of milk, cream, soy milk, rice milk, whatever. non-dairy gelatos are actually quite good and it's the lower fat content that makes the flavors so much richer. if it is dairy-based it will have a lower milk-fat content than ice cream. gelato has a stabilizing agent in it as well, which may or may not be eggs, to keep the correct consistency one it has been made. traditionally it's eggs, but not as much anymore.

all of these factors mean that gelato production is an extremely personal and varies greatly with whoever is preparing it.

"French" Food in Montreal

We recently spent a week in montreal and we found L'express to be awesome (go there for a late-night cocktail and terrine). It's quite charming. We also enjoyed Olive et Gourmand for great breads and such (down in Old Montreal), but get there early in the day or they won't have anything left!

Terra vs. CA Cuisine vs. ??? (San Diego)

i'm a bit biased, but terra has wonderful, consistent food and an amazing wine list. it has been a favorite in the area for almost 20 years (and in this day and age, a place that can stay open that long and accumulate the following that they have, is pretty amazing).

top notch food and service (nominated for a james beard award for service again this year, and have won many for their food in the past)

Help with Marinated Mushrooms?

the commercial ones you speak of employ commercial italian dressings that have a bunch of additives in them.

as long as you store it in a tupperware container without too much space for air you should be able to keep them at room temp...the vinegar should raise the acidity level enough so bacteria and mold can't grow.

also, as a side note, make sure you don't wash the mushrooms...they'll absorb much more of the marinade/flavor if you just brush them to remove excess dirt.

Disappointments -- 900 Grayson, Champa Garden, Sushi Sho, Bui

are you from the area? we could give better suggestions i bet.

i've only had 900 grayson for breakfast, and at hours when i didn't have to wait at all (10 am on a weekday). otherwise, it's much too crowded from the local business-lunch crowd (thank bayer, et al)

Pasta Nostra in Norwalk... accessable by train?

the new fancy-schmancy police station is down the street. you should be fine at night, especially on the weekends (it's pretty crowded down there, the area is expanding all the time)

i've not been to pasta nostra yet, but we go to strada 18 a few doors down occasionally and enjoy it. perhaps, since there are mixed reviews here, look at the menus for both and see which appeals to you more?

and don't miss the truffles, etc and chocopologie on your way back to the station!

i agree with sfoss....Valencia Luncheria is the BEST place to grab a quick bite to eat. there are so many kinds of arepas, etc. to choose from and each is only a few dollars so you can mix and match. be sure to ask for a side of the green sauce if you're taking food to go (it's to die for, and i still haven't figured out what's in it besides some obvious lime and cilantro). in addition, they make an excellent side of rice and beans (it sounds silly, but so many places just can't turn out some decent rice).

also, there is an excellent fine prepared-foods shop/bakery/sandwich shop in the goodwives shopping center (in darien...the same plaza with the darien cheese shop)

for short-term storage, there's seriously no difference between a wine cooler and a normal refrigerator! esp. for whites/roses/sparkling wines

It always seems that way with places around here. I love Mole Mole and go there often, but we're usually the only ones there? Hm.

Chuckles, I've never had a problem with it. I also went to check on Yelp to see if anyone else had a problem...and out of many reviews only a few did. It's an unfortunate byproduct of visiting a very busy restaurant, I think. Everyone's going to have a bad experience eventually, you know?

Unless you're paying a sh*t-ton of money for your meal, but I'd rather gamble a bit...

i haven't got a food processor so i do it the old fashioned way. i also find that doing it by hand works very well for small batches. but immersion blenders are even faster/easir than food processors =)

you can really make it out of any oil. i prefer olive oil, but you can make it with canola or peanut or sesame...

you need egg yolks, salt, a pinch of lemon juice, and then anything else you'd like to put in there. some peope like tobasco, some like herbs, you get the idea. get everything to room temp. and then you put the egg yolks in a bowl and have someone hold it for you, then slowly add the oil while whisking vigorously. about halfway through add whatever extras youd like, then finish whisking until it's the consistency you want (thicker or thinner is a personal preference).

just don't stop whisking or it'll break!

I'm hopelessly devoted to it for Breakfast/Brunch/Lunch! I moved back to the East Coast a few months ago and I miss it...much better than Grayson (which is packed during lunch)

I don't see why not. It's a touristy area and it's summertime (and no places, that I know of, carry a ruler to measure your hemline!). Normally, dress codes are more lax for women.

But if in doubt, call the restaurant! =)

Hahaha. That's a good sign. I'm barely back there. Are there any other interesting places along 9-G that I'm not aware of? I haven't made it to Diaspora yet but hope to soon.

but for future reference.....if you're making caramel candies, the sea salt is the best thing to garnish wish!
