Pastrami sandwich on Oahu?

I'm afraid it is mostly DIY on Oahu. Costco in Hawaii Kai has some 'NY style' pastrami but it is slimy and unappetizing, not even as good as Hillshire Farms pastrami.

Chuck Roast - Recipes other than the usual - Asian perhaps?

Here is a good recipe with (directions rewritten). I use a bit less Sambal Ulek/Olek:

Beef Rendang, Indonesian beef stew cooked in coconut milk
1.5 kg/3.3 lbs. beef, cut into large cubes
12 shallots, chopped (or 2 onions)
5 cloves of garlic, chopped
4 pieces of galangal sliced
1 inch of fresh ginger, grated
(half) cup of Sambal Ulek/Olek (Indonesian chili sauce. Can be found in most Asian grocers)
4 stems of lemongrass
1 tsp turmeric
1 tsp coriander
1 tsp cumin seeds
5 curry leaves (optional)
3 cups of coconut milk
1 tsp of tamarind, in 4 tablespoons of warm water
2 Tbsp of soy Sauce
salt to taste
Process the shallots, garlic, galangal, ginger, Sambal Ulek and turmeric to a smooth paste. Dry fry the coriander and cumin until they give off a good aroma, then grind them finely and add to the paste. Spoon it all over the cubed meat in a bowl and mix it well. Add the curry leaves and lemongrass and marinate for at least 30 minutes. Pour the coconut milk and tamarind liquid into a wok and add the spiced meat and soy sauce and stir until the liquid boils, then reduce the heat and simmer gently, uncovered, for 11/2 hours, until the meat is tender and the liquid is very much reduced. Serve with steamed rice and a salad of sliced onions, tomato, lime and coriander. Ideally, cook it in a wide pan so that the liquid cooks off entirely and the beef fries in the oil and fat left behind.

Picadillo: Capers or Raisins?

The New York Times recently (this year) published a good picadilo recipe emphasizing the desirability of adding small green stuffed olives, raisins, AND capers to provide enough salt. But it is going to be meaty, being chili taken up a notch(and being chili, it gives me heartburn, but I still love it).

Searching for Hidden Gems on the North Shore, Oahu

On the North shore, Opal Thai used to be good, but I haven't been there in a while. Luibueno's has good fish tacos, particularly during happy hour. Fiji Market LLC (56-565 Kam. Hwy., Kahuku) has good home-cooked Fijian Indian food.

Near Tamashiro's, Ming's Chinese (1414 Dillingham Blvd., #101, behind McD.) has good Chinese, including steamed and baked shao long bao.

Sasabune has good sushi, but you better know the etiquette or the chef might turn you away. Very expensive.

If you really love BBQ, Sorry! There is none on Oahu/in all of HI possibly.

The hike to Waimea Falls is easy and enjoyable, specially if conditions allow you to swim in the Falls.

If you drive by someone grilling Huli Huli chicken or sitting on the back of his pick-up next to a large ice chest selling fish, check them out.

FWIW, Dat Cajun Guy in Haleiwa has just been named #11 on Yelp's list of top places to eat in the US.

Agribusiness will prevent you from knowing what products are GMO BY ALL MEANS POSSIBLE. If produce suddenly changes it's properties, it probably is the result of a genetic modification.

Almond paste and marzipan have different nut:sugar ratios. (Almond paste is 50:50 and marzipan has more sugar, I think.) By vigorously processing equal weights of (blanched or not) almonds and sugar, you can produce almond paste as fine as you want.

ISO Fluffy Moussaka Topping

In "Cooking the Greek Way" (SPRING BOOKS, LONDON, 1964), the topping is called Saltsa crema/Greek white sauce:

4-5 oz. butter
2 T flour
10 oz. hot milk
s&p
4 egg yolks
1 t lemon juice
2 T grated cheese

Directions paraphrased:
Melt 1 oz. butter in a sauce pan. Add flour and stir over low heat 2-3 min. Gradually add the milk. Season to taste. Beat in 2 egg yolks. Stir in the other oz. butter cut in small pieces. Add lemon juice. Beat the last 2 egg yolks and stir into the sauce with 1 T grated cheese. Spread on top of the moussaka and sprinkle with 1 T grated cheese.

You could be right. I've never been to the Philippines. But IMO, Thelma's four-choice plate lunch is the best value-for-the-money cooked food on Oahu. The diniguan and lechon are outstanding.
