Almond paste and marzipan have different nut:sugar ratios. (Almond paste is 50:50 and marzipan has more sugar, I think.) By vigorously processing equal weights of (blanched or not) almonds and sugar, you can produce almond paste as fine as you want.

ISO Fluffy Moussaka Topping

In "Cooking the Greek Way" (SPRING BOOKS, LONDON, 1964), the topping is called Saltsa crema/Greek white sauce:

4-5 oz. butter
2 T flour
10 oz. hot milk
s&p
4 egg yolks
1 t lemon juice
2 T grated cheese

Directions paraphrased:
Melt 1 oz. butter in a sauce pan. Add flour and stir over low heat 2-3 min. Gradually add the milk. Season to taste. Beat in 2 egg yolks. Stir in the other oz. butter cut in small pieces. Add lemon juice. Beat the last 2 egg yolks and stir into the sauce with 1 T grated cheese. Spread on top of the moussaka and sprinkle with 1 T grated cheese.

You could be right. I've never been to the Philippines. But IMO, Thelma's four-choice plate lunch is the best value-for-the-money cooked food on Oahu. The diniguan and lechon are outstanding.

There are plenty of places open. (Do you think West of Aiea it is all pastoral, agrarian society?) She might like the Monkeypod. They offer both food and libations. Nearly civilized really.

If she leaves about 9, UNDER NORMAL CIRCUMSTANCES, she should arrive before 10. Should take 45-50 min. Returning that late will be easy UNDER NORMAL CIRCUMSTANCES.

Thai Herb Garden is one of the 4-5 best Thai Restaurants on Oahu IMO. Also, a block or so up Kapahulu is Pyramid (Egyptian), which has a nice all-you-an-eat lunch.

Your post-arrival hours might be pleasantly spent at La Marianna, if you are into old-school Tiki Bars. Some dishes are OK, but after a Scorpion or two, you won't care. Good for unwinding.

There is a very good, but a bit expensive, Chinese restaurant in the basement of the Marriot (entrance from Ala Moana).

The Hau Tree Lanai is a good choice IMO, and you have enough lead time to find out when the sun will set, and you can request a table by the rail to better enjoy it.

An alternative to Lucky Belly would be Little Noodle House.

In East Waikiki, Thai Herb Garden on Kalakaua would be an interesting choice for Sunday or Friday. Ask if the have the Kabocha squash dessert (not on the menu).
