What Foods Do You Hate/Dislike that Most Hounds Probably Love?
I wish I could tolerate meat gristle, cartilage and fat. Hating them means I am missing some wonderful foods especially Asian. I can't imagine my being able to even put tendons in my mouth Pictures current fad of braised and fried pork belly lookd delicious, but I know I will not be able to swallow that much fan. Cut thinly,ike bacon, is a whole other story. Has anyone been able to train themselve sto eat these foods that "bounce" back?.

Thai lemongrass lobster can quick and is delicious
Couple of TBLs of white part of t he lemon grass chopped supere fine
garlic - I would never tell someone how garlic to use much to use,
Galanga, if you have it, gineger if you don't
Saute and add a glug of water to steam the lemon grass a bit until dry
Add enough curry powder so one would ask, "What is that spice in thebackground?" The tabel commoisseur would answer, "It might be curry."
Saute with above and additional 30 seconds.
Add 3 oz water/broth/whiet wine and 3 oz of canned coconut cream.
Add lobster chunks - cook to consistency desired.
Finish w chopped fresh cilantro and ground cashewws

Pepe's, Totonno's, Lombardi's, Patsy's and Grimaldi's all stem from the original Grimaldi's recipe and, much more importantly, method of cooking.
Whether the oven i gas, coal or wood fired, the key (according to the chief man at Totonno's) is the heaty of the oven - upwards of 800 degrees F.
All original owners worked at the original in NYC. (I think Grimaldi's but maybe Lombardi's.)
If you get to Totonno's during the chief cook's break, a tallish, thin man. try to catch him when ge goes out front for a smoke. Intersting and informative guy,

Settle back and imagine the perfect blueberry pancake.
Hordes of those BB-sized tiny, but flavor-galore wild Maine blueberries.
An honest pancake batter, not crepe light or egg-white flufy, that holds the blueberries from rolling around your plate and keeps you going until a late lunch.
The Mariner in downtown Camden looks like a faux-local tourist trap - uncomfortable booths, crowded tables, zippy service. Just the best blueberry pancakes in the whole world.
For the gluttinous, like me, share a cinnamon roll if you have a party of four, or if only two, order one anyway and either gorge or walk away with it.
Anybody make salmon gravlax?
Grapefruit peel on the salmon before curing adds a great flavor. It was serendipity that I discovered this. I had thought I was adding lemon peel ( I had a cold).
Not sure why but it is a great combo.
What's the deal with Duchess in Connecticut?

Sourdough rolls form Boudin Bakery in San Fransisco. They are partially cooked and need only a few minutes in the oven for great sourdough!
