Ah So sauce...Am I the only one
I agree about the "new" gloppiness. Especially disconcerting in the duck sauce which used to be the consistency of applesauce. Now it's more like a thick syrup.
New to Maryville, Tennessee
Also close to Maryville College, on Washington Street, is a new place called Full Service Bar-B-Que. The location was once a gas station (hence the name "Full Service"), it's a drive in place, and very affordable. They smoke all their food on the premises, do some excellent pulled pork, pulled chicken that will make your mouth water and ribs. Their signature sauce is called "Tennessee Whisky Sauce". A favorite! I suggest it for your first taste of Southern Barbeque.

Should a diner be entitled to tour the kitchen?
At Commander's Palace in NO, they frequently walk you through the kitchen as you are being seated. Freaked me out the first time, I must admit. On one occasion when we had to wait for our table, we were offered a tour of the wine "cellar". I love Commanders!
Caswell Beach/Southport
Lived on Oak Island (Caswell, then Long Beach) from '84 to '95. Go back every couple years or so for a week of vacation. Can't believe how much things can change! Most of the restos mentioned are completely unfamiliar to me. I remember when Provisions was "the" new thing. Yikes---I sound like my dad! The next trip (hopefully this fall), I will search this board for recs. Thanks for keeping me current. (p.s. back in the day, I had to drive to Wilmington to find fresh parsley. When I used to see TV chefs say you could find an ingredient at "any" grocery store, I used to think---they've never been to SE NC!!)
Critter Fritter Casserole
Sounds delicious! I'm not sure if I get what "critter' may be included, but sub "B#squik" for your recipe's cornbread mix and I think you have a "classic B#squik" box recipe. But, FWIW, I LOVE the small boxes of Jiffy cornbread mix. 3 for $1.00. Chili loves cornbread.

Junk Food & Office Productivity
My husband and I own an engineering/construction company. On our last big project, rather than have a steady supply of snacks, we would have donuts every Monday morning (Krispy Kreme---not my fave, but local), on Tuesday I would bring in homemade chili and chips, Wednesday everyone was on their own and Thursday the boss (hubs) would take everyone offsite for lunch (and turn it into a safety meeting). Cold water was always available and very important due to the nature of the work. Our employees really enjoyed and counted on these perks, and they used them to foster goodwill with other onsite groups. It was a sign of being appreciated to snag an invite to "Chili Tuesday". At times these expenses seemed high, but it served to bond our team and make our company the envy of the site. p.s. at project end, we had a HUGE barbeque and invited everyone and anyone who had ever helped us as a thank you. Very well worth it in my opinion.

I love seeing the younger, "trimmer", slower talking Mario on these reruns. I always fantasized about sitting on the center stool with Julia Child on my right, Tony Bourdain on my left, and some delights from the Amalfi coast on the menu.

I laughed, too, but didn't think too much of the fact that he didn't recognize that it was "their" Joey and Sara. If Dale had said it was "Tre and CJ", and Hung said "Tre and CJ who?" that would have been different. Joey and Sara....John and Mary....normal names, random, could have been anybody.

As a Julia fan from the get-go, I was disappointed in her attitude last night. I forgave her breakdown during the reunion, but the old Julia would have sucked it up by service and pushed through, giving her absolute best. I hope jfood is wrong about GR taking culinary school off the table.
When Bonnie and her brigade were lounging around, seemingly without a plan and only 10 hours to service, I thought she was doomed. I am so curious as to how they pulled it all together in time. I am a definite "planner" and cannot for the life of me understand the "wait till the last minute" types.
In the end, I was voting for Rock. It just seemed to me that he would benefit most from the position. When he opened the door, he seemed truly grateful where I imagined Bonnie would just be jumping up and down with giggling girlie glee had she been the winner.
All that said, I enjoyed the series and feel a little sad that it is over. With TNFNS, Top Chef, Hell'sKitchen and Kitchen Nightmares, it has been a great summer for TV viewing, IMO. I have also truly enjoyed the CH discussions on all.
Hell's Kitchen Finale - Part 1 (spoilers)
I really didn't see Julia as a sore loser last night. As kizzy said above, she was emotionally overwhelmed. You have to admit, Julia is straight up honest. When she is asked a question, or her opinion, you hear exactly what she thinks and feels. When she said that last night was her "low", I believed it. When Bonnie picked Melissa, I wanted to cry, too!

When Ramsey said "Jen", I swear the first thing I thought of was jfood leaning back in the barcolounger (jbarcolounger?) with a knowing "Told ya". You nailed the Beauty vs. Beast finale. I'll go with Beast, but I had a real hoot when Bonnie gave GR an earfull! Lots of pent up stuff in that little girl......

As someone else mentioned, keep looking for the source. I had a similar problem once until I found banana peels stashed under the sofa by a teen too lazy to take them to the trash. Grrr!

Well, jfood, you are batting 1000 with the predictions! If it IS a Beauty/Beast finale, I'd have to go for Beast. Last night Chef Ramsey characterized Rock as being the most passionate and determined. He doesn't seem to think all that much of the nanny, from what I see.

Dang, I hate to see my girl Julia go! As she said when asked why she should stay, she never gives up. I admit to getting choked up when Ramsey offered her a scholarship to culinary school. This is my first season watching HK, so I don't know for sure, but I assume it's not a typical gesture. I hope she goes for it. Good luck Julia!
About Rock and Jen, I thought they were both acting like children, Jen being the worst. If her strategy is to bait Rock into blowing up, it could easily backfire.

The thing I found interesting was that after the winner was announced, the camera never again showed Rory's face, and even as she received hugs from the others, her back was always to the camera. My take was that she thought she had a lock on winning. Amy had already been eliminated, and once JAG "resigned", she was it. Even as she congratulated Amy, she looked way more than miserable. I deleted the ep after watching, so can't go back and make sure I wasn't seeing things. As it is, she's got that new restaurant opened up, so that ought to keep her plenty busy.

Was it high definition TV? I can watch almost ANYthing if it's HD. It seems "realer" than real, and I am an addict. I don't doubt for a second that you could smell the habeneros.

Commanders post Katrina
Was there on a JazzFest Saturday in May. Happy happy! Great food, spectacular service and everyone even friendlier (if that is possible!) than ever. Can't imagine a trip to New Orleans without a stop at Commander's.
Hell's Kitchen -- July 16th
I'm voting Julia all the way. That girl has guts. She keeps saying that she doesn't know fine dining (and everyone else never hesitates to remind her), but I think she has the most promise of the lot. If she did some time in a "real" fine dining kitchen, she would learn quickly and be an asset to the establishment. If she does not win, I hope she gets a great job out of it. She deserves it.

I have been to Johnny Carino's, and agree about the calamari appetizer. In fact, I generally make that app my meal with a side salad. Add a frosty cold beverage and I'm happy.

Thanks for starting the thread, Rock. I am in agreement with all of your observations. Hung's attitude reminds me of Stephen in TC1. Any judge who criticized his dish was "obviously" a moron. Sheesh!
The girl who was sent packing was so far off my radar that when hubs asked me who was let go, all I could say was "I don't know. Some girl."
