The are one of the suppliers of fowl and meat for the restaurant at which I work. If you call them up and tell them that you want a whole duck, and are paying cash, they may let you drop by and pick one up.

Baking Chicken

Prof. Salt is spot on with the mechanics of cooking chicken breasts. But, this much-maligned portion of poultry also has a culinary savior for moistness and flavor...brining.

Chicken breasts are the perfect medium for a quick, (1-2 hours) immersion in your favorite brine solution. Moistness, tenderness, and most importantly flavor will enhance the quality of the meat. And, brining will give you a bit of a grace period between wonderfully moist and Sahara dry.

Kimchi on a hot dog

Hey Wayne,

Before I left Tokyo, at a Hanami party (cherry blossom viewing), I grilled hot dogs, and one of the other guests brought kimchi. As you can probably guess, the kimchi found itself on the plump, kosher hot dog.

Quite a brilliant combo, kimchi and dog. I still buy kimchi at my local asian market to throw on my dogs.

squirrel (Moved from Ontario Board)

Hey Sam,

Definitely a case of "chacun a son gout". Love squirrel, and also love the taste of autumn racoon. My grandma braised racoons we hunted on her ranch in late October/early November with apples and prunes, and it was just brilliant.

The closest flavor analogy I've ever been able to compare autumn racoon is to the thigh and leg of a wild turkey, but a bit richer.

Please don't dismiss racoon as a food...after all, there at least six breeds of coonhounds for which the breeding has been perfected towards tracking these creatures into trees. And not for sport this breeding was done.

Check with a local hardware store that sells planking. Back where they fabricate the planks to order, there is usually a "remainder bin". Worth a look. The hardware folk can lead you towards the stuff that isn't treated.

Sticky Rice Substitute

Hi Miss Needle,

Sushi rice, (aka pearl rice, mentioned above in my original post) is probably the best for sticky rice.

Absent the posted choices of rice, I've had amazing luck making sticky rice using jasmine with the methodolgy given.

BTW, learned about using jasmine from an old friend when I was living in Tokyo.

Sticky Rice Substitute

Hi chicqail,

If there is an Asian market near, look for a bag of sweet rice, mochi rice, or pearl rice. They are all the same family of glutinous rices.

If they aren't available, then jasmine rice is the closest substitute.

With any of these rices, rinse 3-4 times with cold water. Cover the rice with 2-3 inches of cold water, and soak for 6-8 hours. Drain, but DO NOT rinse. Then, either cook in a rice steamer, or use the cheesecloth method that you used earlier.

Hope this helps. BTW, since pearl rice is now so expensive here in Portland, I use jasmine rice for my sticky rice needs.

Onion soup question

Hey qudeatz,

In a good onion soup, the onions are cut to a fine julienne, which negates the large chunks hanging over the e dge.

Agree with vvvindalo that the crouton should be at the bottom of the bowl, with the gruyere broiled on top, and classically served with scissors to allow for dining with comfort.

PDX - best of what's new?

Hi Hanny,

I dined at Clyde Common about a month ago with friends/restauratures from Tokyo. While 95% of the menu from then to now has changed, I'm sure that you will have a totally memorable meal!! One of my co-workers, (who is soon leaving us to move over to Lucier) had his b-day dinner at
C.C. last week, and was blown away by how good it was.

I'm just sorry to see that the rabbit is now off the menu.

Is this wine safe to taste - report

Okay, took a chance...

Uncorked the glass carboy, and poured a splash into a 12 oz. brandy snifter...

Color: rich, clear amber
Legs: medium to medium thick
Nose: so heavy on raisins anything else is lost
Taste: huge raisin to start, slap upside the head of black cherry at the end
Finish: silky and warm.


Went back, and gave myself a healthy pour.

Thoughts: This is a tawny port deprived of cask-aging. From the way I'm feeling, I'm going to guess at an ABV of 20%-25%. This stuff is strong!

Is this wine safe to taste?

Hey winechik,

Just went down and looked again, larger than ten gallons, smaller than twenty. Also did something I should have done before; took a flashlight and shined it from the backside of the carboy back towards me. Not cloudy at all, dark red and clear. Cloudiness was just refraction from the glass jug. At the bottom of the carboy there seems to be a very fine layer of sediment.

I'm gonna give it a try, and will report back.

How Do You Like Your Breakfast Ham??

Hey Davwud,

I prefer a thickish cut, (at least 3/8 of an inch), slapped on a cast iron skillet heated to medium. When it is nicely browned on both sides, I remove the ham, lower the flame on the stove, and set the pan aside to cool down a bit.

When the pan has acquiesced to my temperature bidding, I return it to the heat, and use the flavorful drippings to cook my eggs, potatoes, grits, pancakes, etc. Then, once those are plated, I return the ham to the pan for a quick dose of heat, and revel in breakfast nirvana.

Is this wine safe to taste?

Hey all,

I rent a room in an old farmhouse in Portland, OR. Down in the basement is a pantry. And in the pantry are the artifacts of my landlady's old winemaking hobby. One of these artifacts is a 20 gallon glass jug, (car boy?) filled with a cloudy purple liquid. The jug is corked with a cork/hydrometer gizmo. The liquid in the jug comes about 1/3 of the way up the hydrometer. There is evidence of some evaporation, maybe about 2-3 inches.

Speaking with Pam, she figures it has been down there for about 25 years, made from grapes, (she doesn't remember the variety) that her father-in-law grew here in the Willamette valley. I uncorked it, and damned if it doesn't have the aroma of port.

So, I'm wondering, from a health viewpoint, is this wine safe to taste? Any dangerous microbes swimming around in it?

"kappabashi" knife shop

Upon my return to the U.S.A., I emailed Union Commerce regarding purchasing another knife to be shipped here...no response. Called, and found out that they most adamantly will not ship knives to the U.S.

I don't know that this was the subject of your inquiry, but this was thier policy as of 2 years ago.

Pork - the "other white meat"?

Because of the similiarity to chicken in cooking properties and methods, along with the fact that the flesh is naturally extremely low in fat, I consider rabbit to be the "other white meat".

In my personal culinary lexicon, pork holds an exalted place as a meat unto itself.

The chef at Clyde Common is doing his damned best to utilize all he can to serve to his guests from the whole pigs he recieves once a week. Whether it is recognizable cuts for menu items, or the "other bits" for house charcuterie, an admirable effort with a very tasty outcome.
