Celebrating parents' 50th anniversary in Cashiers-Highlands area

Cayon Kitchen @ Lonesome Valley in Sapphire NC We just got back and had dinner there. The setting is gourgous, yet is casual enough to wear jeans if you want (several did). Chef Fleer, the ex-head chef for Blackberry farm cooks here more casually, family style in fact. He accomadated the vegatarian in our group with a beautifully made fresh vegtable pot pie. The dinning room is a barn with wide doors left open to the oustside and has a beautiful stone fireplace. The menu changes all the time and they post it on their FB page ahead of time. They are only open Thurs-Sunday and it's $45 for a 3 course meal. Everything is fresh and alot of it grown right there. I tried to post a couple of pictures for you but it failed. It was a very special evening for us and I don't think you'll be dissapointed.

Breakfest in Sapphire/Cashiers/ Highlands, NC area

I know this is late but a suggestion for future seekers. Do brunch at Chef John Fleer's new resturant Cayon Kitchen @ Lonesome Valley, which is in Sapphire. Beautiful setting! We were there the same weekend as you and had dinner there on Friday. Chef Fleer was so gracious he even signed our menu's and talked with us a bit. You won't be dissapointed!

The 2 breakfest we did have were dissapointing everyones eggs benidict were overcooked, may as well have been hard boiled.

authentic (nonchain) Mexican food in Knoxville?

I love their cachete tacos, especially that salsa that comes with it . They also have a store on Market Square now. I havn't been able to try anything else on the menu though since I love those tacos so much. Ask for a margarita made from scratch if you go though, the machine ones are horrid, and taste of pure sour mix.

What to cook for 8 people in rented beach condo 6 hours from home?

Boil & peel shrimp with some cocktial sauce, served hot or cold, salad and some bread. One meal we always enjoyed at the beach and easy. Low country boil if you want to get a little more envolved.

What is your favorite recipe for pork shoulder?

How much food to make for 25, Ocktoberfest?

Thanks everyone. After futher research I found, indeed, 12lbs is nowhere near enough meat. I'm going to do 2, 10 or 12lb. roasts. The roasts, cabbage, potato salad, & soup, are the things I am making. Other people are in charge of the rest of the meal.

How long would you think I need to reheat the chopped up meat mixed with drippings in the oven at 325. Thanks.

c oliver, this sounds really good. I am cooking an Oktoberfest style menu this weekend for 25. My original plan was a pork butt braised with reisling with a fruit meripoixe of apples, prunes & currants made into a gravy. This roast sounds good and easier. Do you think the flavor would fit a Germany style menu or would the chilis in the rub make it more of a spanish flavor profile? Also I'm making everything at home and transporting it to a cabin with no microwave for reheating. My plan was cook here, go ahead and carve it up, mix in all the drippings or gravy if I stick to my original recipe, and then reheat in the oven. Would that work with this recipe? Are there enough drippings to keep the meat from drying up on the reheat? How long would you reheat it for in a covered aluminun throw-away pan. Thanks

How much food to make for 25, Ocktoberfest?

I 'm cooking an Oktoberfest style menu for 25 for next weekend. Hopeing someone here can help me out with portions so I make enough food for everyone. Other people will be making appitizers and 2 other side dishs. After doing a little research I've come up with these portions, do they sound about right? The most I've ever cooked for is 12.

Serving 13 adults (6 being hearty eaters) 7 teen's and 2 kids.

12 lb. bone in shoulder roast, or boston butt braised in reisling and an apple prune gravy?
4 1/2 quarts of potato salad. which I think is about 7 lbs. of potatos?
.4 quarts of red cabbage or about 4 1/2, 3 lb. heads of cabbage?
6 quarts of vegtable soup, served in small appitizer style portion, like maybe a paper cup for coffee.

One other question. I will be making everything in my kitchen and transporting it to the event. I thought maybe I could go ahead and chop up the roast after cooking, tossing with the gravy, then cover and reheat in 325 oven for how long??? I don't want it to dry out.

I'll also be there that weekend and can't seem to find info. about the parade routes. Even the Official MardiGras sites, the maps don't work for me for some reason. I'd like to do both Brigtsen's and Comander's Palace but I'm afraid to make the reservations for anything in that area. Are the roads closed the whole day? Will it be hard to get there even if we took a cab from the FQ? Probably to late for a reservation anyway.

Tortino di papate e zucca/potato and pumpkin pudding

I came across this recipe in one of my cook books and would like to make it as a side for my shorts ribs at a dinner party on Saturday.

I like the fact thats it's baked so I don't have to do any last minute fussing.

I was wondering if I could make this way ahead of time before baking so I can just pop it into the oven right before dinner.

Thier are eggs whites, stiffly whipped, folded into all the ingredients as a last step before spooning into a prepared baking dish,.

Do you think they will deflate and ruin the dish if made a few hours in advance?

In east Tennessee, ? great rellenos?

Chez Guevara, also known as La paz by the locals, serves the BEST pork chili rellenos I've had anywhere in my travels (this country). I grew up in San Diego.

They stuff it with pork, raisians, cheese, and it's topped with a mole sauce. I can never tear myself away from ordering it to try some of thier other dishes cause I like it so much.

They're in Knoxville on Kingston Pike in the same shopping center as Barnes & Noble, way in the back corner.

Funky atmosphere and a great place to go even for just drinks, local favorite for a long time.

ISO: online Rum Cake

I got a sample for one for the price of postage at http://www.rumcake.com/ that was very moist and delicious. It came in a 4 inch round tin sample size. The Company is Angie's. I'm pretty sure I got the info. from a chowhound in one of the "best cataloge for gifts" to order from during the holidays. It took quite a while to get my sample but well worth the wait, I'd order agian as a gift or for ourselves. Her number is 1-800-322-5452. They're are different choices. The one I got and was reccommened to get was Black something or other, cann't remeber exactly.

Bamboo cutting board--too hard?

I just purchased a beautiful 18x20 bamboo cutting board right before Christmas from a cataloge. It's already splitting in several spots. with one split running the whole length of the board, and seemed to have happened overnight!
I can't decide wether to ask for a refund or to replace it in the hopes I just got a lemom.

This board was on sale at $80.00, so not cheap by any means.

Anyone else have this experience with bamboo?

I want to make Osso Bucco for New Year's Eve

I know this is late also but, Tony Bourdain's version of Osso Bucco Kicks ass! I think I really prefer the Orange Germeolta versus the Lemom one. You can find it on Epicouris, I know the spellings wrong! I agree with above poster, Put it in the oven to Braise! Much more even cooking.

What's the most indulgent thing you ate/drank over the holidays?

Special Christmas for us this year. My Step-Mother-Inlaw joined us for the first time for Christmas in 10 years since the passing of my Father-in-Law at Christmas time when we were last together for the holiday.

So indulgence was the word of the day!

First meal on her arrivel with some very close friends, who knew both, consisted of me cooking & serving a somewhat French Meal:

Apps: Rosemary Toasted Mixed Nuts & Triple Creme French Cheese, with pepper crackers and Champagne

Amuse: Foie Gras stuffed Figs, baked and glazed with Saba

Entree: A 3 day cooked Daube, served with Roasted Glazed Root Vegtables and a Mixed Salad with a Myer lemon vinigertte.

Dessert: An Eli's Cheescake which was a gift.

All served with a Magnum Bottle of a 1978 Robert Mondavi Cabernet that my Father-in-law bequethed to us, and had been given to him as a special gift through his work.

Great Stories and Memories were had!

Other Indulgent meals I cooked while she was here consisted of:

Radiccio & Gorgonzola Pasta with Salad and Garlic Bread

Prime Rib, with Mushroom and Creme Stuffed Baked Potatoes-Xmas Eve

Eggs Benidict with Roast Beef and Bearnaise, X-mas Brunch

Veal Piccatta, just because I ALWAYS must make this when she visits!

Assorted Baked goods.

It was a very memorable Christmas for us. And yes we did go out!

Walkerwoods also makes a jerk seasoning to go with their BBQ marinade. The two combined really kicks it! Just rub your chicken, pork, or fish with the seasoning, let sit at least a couple of hours or overnight, grill, then brush with the sauce the last few minutes, great stuff!

I get mine at The World Market which I believe is owned by Cosco, so they may carry it also.

Using Saba Dressing

I love my saba, I'm on my second bottle! Use it just like you would a balsamic vinegar. Salad dressing, drizzle over stawberries, gilled peachs, cantalope, or icecream. De-glaze a pan for a sauce. Our favorite use is making a dipping oil for our bread. A little good olive oil, a splash of saba, a few herbs, and sometimes a little grated chesse. Grill the bread if you can, and rub with some garlic.

What to do with a pound of hamburger?

Calico Beans is a comfort food for my husband,is an easy do ahead, and freezes very well.

Serves 6
4 slices of bacon
1 lb. ground chuck
1 medium onion, chopped
1/2 cup brown sugar
1/2 cup catsup
1 can kidney beans,drained
1 can lima beans,drained
1 can cambell's pork & beans, undrained

Fry bacon until crisp; remove and pat dry. Brown meat and onions in bacon grease. Add remaining ingredients except bacon and stir well. Pour into a greased (Pam) 2 1/2 qt. deep casserole. Crumble the bacon over the top. Bake, uncovered, at 300 for 1 1/2 hour.

Serve with a salad & bread.

BBQ Cookbooks

I loved,loved,loved, reading "Peace Love and Barbecue" by Mike Mills and his daughter Amy Mills Tunnicliffe. It's a great read about the behind the scenes world of The Grand Champion Pitmasters from around the country.

It's full of some really good slow and low cooking tips and secret recipes from some of the best out there.

I cooked up a batch of Mike's award winning ribs last summer and although a bit labor intensive and a long 6 hour cooking time, they were the best damn ribs I've ever made!

In the back of the book he also lists addresses of bbq shrines thoughout the country.

You will drool your way through this one.

Beets, beets, beets

Don't forget the beets beautiful greens! Wash, dry, and suateed in a pan with some good olive oil, garlic, salt and pepper, they are delicious! Use alot of them in the pan as they cook down quite a bit like spinich.

Well I can't say any of these choices I'm giving you could be considered regional or unique, expect for the aspect that they are to Knoxville, but here are some.

Right across the street from where you are staying (Crowne Plaza) is Market Square, which in it's heyday use to be the biggest food market in this area.

There are several bars and resturants with late night menus.

The Tomato Head serves until 11:00 and is a huge local favorite. Great pizza, salads, and sandwichs. Everythings fresh and done very well.

La Costa serves untill 11:00 also. It is recently opened, serving nuevo-latino cuisine. They use all organic ingredients. I have not been yet but am very eager to get down there ASAP. There menu looks very promising which you can view at http://knoxmenus.com

Preservation Pub is a fun place to go for live music. They serve a limited menu there, mostly salads and sandwichs. I know they stay open until 3:00 am., but not sure how late they actually serve food.

All 3 have outdoor patios.

If you want sushi, Nama's on Gay St.(short walk) is operated by the same guy who just opened La Costa, and serves until 2:00 am.

Also on Market Square is the World Grotto, I know they have plans for serving food but am not sure if they have started yet. You should at least pop in for a drink at the down stairs bar. Very unique. You may have to pay a cover though depending on who is playing. The Fixx played there a couple of weeks ago for a $15.00 cover

A few more I'd like to add;

Northshore Brasserie on Northshore at Pellissippi. My new favorite in town, don't miss the lobster club on the lunch menu! Typical bistro menu done very well for this area

By the Tracks Bistro, Kingston Pike.

Chez Guevara, in the shopping center with Toy's US, great pork chill rellnos with rasins & mole.

A Taste of Savana, great sandwichs and daily cuban specials, Lovall Rd. shopping center.

Edison Park Steak House, in Farragut on Cambell Station. Excellent wine list and Steaks. They also do wine tasting dinners.

Copper Celler at Berden Hill also does great Steaks & Prime Rib. I know we are not close to the ocean but they're oysters on the half shell are fantastic.
