Why won't these split peas soften?

That's interesting. I always buy split peas in bulk, and get the same slow result as Junior Balloon. I have no idea why that should be, but will certainly try the bag-packaged peas, in the interest of science : )

Why won't these split peas soften?

I don't think they're very old, but I'll see what happens if I don't soak them. Do dried peas get old? I keep them in sealed Ball jars.

Why won't these split peas soften?

I have made (dried) yellow split pea soup many times from a very simple recipe that doesn't require any soaking, and only about an hour's cooking. (It says.) But whatever I do, I get crunchy soup.

I even soak them overnight and have cooked the soup for as long as three hours -- and the split peas still have a slight crunch!

Any suggestions as to how I can get regular old soft, mushy, pea soup? Much obliged : )

Christmas ham for two

Thanks for all the clear responses. I guess we just have to decide how much ham we want to have around, and for how long. Starting with scalloped potatoes, the side suggestions sound easy and delish.

Happy holidays, ChowHounds.

I want to make Christmas ham dinner for two people, but have never made ham before, so would you please start from scratch? And suggest easy sides, please? Thanks, and happy holidays.

Brown Bag Roasted Turkey [moved from General Topics]

Wow, my mother roasted turkey that way about fifty years ago and I can still remember the succulence of the perfectly-browned skin. Thanks for the memory and have a Happy Thanksgiving : )

When are poached chicken breasts/cutlets completely cooked?

I am reassured, since I'd rather end up with chicken jerky than with food poisoning, but glad to know that those aren't the only choices. Thank you all.

When are poached chicken breasts/cutlets completely cooked?

That's a help, but does the meat thermometer stay stuck in the chicken while it's in the simmering water? And, if so, does it need to be a specific kind of meat thermometer?

When are poached chicken breasts/cutlets completely cooked?

I've had enough experience with undercooked whole chickens to be very careful with the juices and internal temperature, but what about poaching chicken cutlets? I usually bring them to a full boil, and simmer, covered, for about 1/2 hour. They look ok, but is there a way to know for sure when they're thoroughly cooked? TIA

How do you make berry sauce?

I tried the cooked version, and it came out delicious with no spices or seasoning, just a little too sugary. Next time I'll try some of the other intriguing suggestions. I wonder if chocolate habanero is available in NYC. Thanks, all.

How do you make berry sauce?

I have some blue, black, and raspberries, and I'd like to make a simple sauce for ice cream or shortcake, but I'm not really sure how to do it, without ending up with a moldy mess (from rinsed berries sitting around). Any tips, hounds? TIA

Coconut Cream pIe?

Tres Pommes has it on their menu, but they didn't have it when I was there. Probably a good idea to call first.

NYC FOODIE AT A LOSS...

I stopped going to Jardin Bistro several years ago because of how uncomfortably squashed together the tables were. I don't remember whether they were small or not, but we definitely didn't want to linger.

Buckley's on Ave. S?

I passed on Buckleys, but thanks for reminding me about Tad's. The worst piece of meat I've had since my Tad's days was hanger steak at The Farm on Adderley -- twice. Most recently, it was an inedible mass of (rare) gristle.

Kosher for Passover cakes in Brooklyn: any recs?

I usually buy Passover cake from Ladybird Bakery -- and may do that again this year -- but what else is out there that's delicious and kosher for Passover? Any opinions of Chiffon Bakery or Crawford's? I can't find websites or reviews. TIA

GOOD Jewish Bakery in Brooklyn???

noisejoke, The closest thing to the salt sticks of my youth, was in the excellent bread basket at Peter Luger's. Their salt sticks were so good that I asked the waiter where they were from, and I think he said somewhere in Queens. Unfortunately, that's all I can tell you, so if you find any, please post. Thanks.

SUPER BOWL...What's on your menu

Hey, bermudagourmetgoddess, can we come over? Since both of our NY teams will be watching -- not playing -- we're being lazy and buying hero sandwich fixings, i.e. Italian meatballs, chicken parm, and I don't know what else yet.

Hoping for a fun game that the Saints win!

Buckley's on Ave. S?

Thank you both for the helpful Brighton & Bay Ridge info. Kebeer was already on my list to try, but it looks like we're going to stay in Sheephead Bay and have a Greek dinner at Yiasou.

WINTER seafood seller at Bklyn greenmarket

. . . and at the Cortelyou Road greenmarket. They usually have more fish than shellfish, and yesterday they had fish heads for $2 each. Not my thing, but fantastic if you're making stock.

Searching is good and I always try that first, but the speed with which restaurants open and close, and go up- and downhill, there's always new information out there.
