Why won't these split peas soften?

That's interesting. I always buy split peas in bulk, and get the same slow result as Junior Balloon. I have no idea why that should be, but will certainly try the bag-packaged peas, in the interest of science : )

I don't think they're very old, but I'll see what happens if I don't soak them. Do dried peas get old? I keep them in sealed Ball jars.

I have made (dried) yellow split pea soup many times from a very simple recipe that doesn't require any soaking, and only about an hour's cooking. (It says.) But whatever I do, I get crunchy soup.

I even soak them overnight and have cooked the soup for as long as three hours -- and the split peas still have a slight crunch!

Any suggestions as to how I can get regular old soft, mushy, pea soup? Much obliged : )

Christmas ham for two

Thanks for all the clear responses. I guess we just have to decide how much ham we want to have around, and for how long. Starting with scalloped potatoes, the side suggestions sound easy and delish.

That's a help, but does the meat thermometer stay stuck in the chicken while it's in the simmering water? And, if so, does it need to be a specific kind of meat thermometer?

I've had enough experience with undercooked whole chickens to be very careful with the juices and internal temperature, but what about poaching chicken cutlets? I usually bring them to a full boil, and simmer, covered, for about 1/2 hour. They look ok, but is there a way to know for sure when they're thoroughly cooked? TIA

I passed on Buckleys, but thanks for reminding me about Tad's. The worst piece of meat I've had since my Tad's days was hanger steak at The Farm on Adderley -- twice. Most recently, it was an inedible mass of (rare) gristle.

noisejoke, The closest thing to the salt sticks of my youth, was in the excellent bread basket at Peter Luger's. Their salt sticks were so good that I asked the waiter where they were from, and I think he said somewhere in Queens. Unfortunately, that's all I can tell you, so if you find any, please post.
