During the late 60's, early 70's I patronized a French restaurant in Manhattan. It is now closed. All I can recall as you entered the restaurant there was a lobby that had seating around white columns, and the walls were a purple color.

Suggestions needed for Menton, Ste. Agnes, Gorbio, Nice et al...

Mirazur and Hostellerie Jérôme are definitely worth it. Order the menu, not à la carte.
Go into Ventimiglia one morning (not Friday or Sunday); see the market, much better than the market in Menton, and shops; the restaurants are mediocre, but they serve very good spaghetti vongole.
To park in Nice enter past the old port and stay along the water; after you round the point with the Monument aux Morts, you will be on the Quai des Etats Unis; just after passing the market, you can enter the new Parking Sulzer; it is not free, but from there you can walk anywhere.
"Cycling in Nice" is a dubious concept.

St. Jean Cap Ferrat mini-report: Paloma Beach restaurant

It appears that due to strict application of the seafront law by Parisian bureaucrats, that the Paloma Beach structures will have to be torn down at the end of this season. A reprieve is possible, but not likely.

Le Mayssa or La Réserve de Nice. Both close to you. In my opinion not too fancy for a special birthday dinner.

lunch between Monte Carlo and Nice

La Chèvre d'Or has come back recently from a poor period. It would be a substantial lunch, maybe not appropriate for getting back on the road. The best restaurant open for lunch on your route is Mirazur in Menton. (Also with a great view, but reserve to get a window table.)

Cote d'Azur Questions

Well, you have obviously done a lot of good research. It's not a vs situation; you would have a very good and interesting meal at any of these restaurants, (except Les Deux Canailles, which I find boring.)
But you have omitted the two best restaurants on the Côte d'Azur: Mirazur in Menton and L'Hostellerie Jérôme in La Turbie. I would also put in a good word for Le Figuier de St Esprit in Antibes.

Montauroux and environs

I understand that Eric Maio has left his good restaurant in Montauroux, but that someone serious has taken it over. Try it. Two excellent restaurants not far away are Le Relais des Moines in Les-Arcs-sur-Argens and L'Hostellerie des Gorges de Pennafort near Callas, north of Le Muy.

It's not on most people's radar, but our hotel booked us into Kagaya Ginza ten. We had a very good kaiseki meal there.

We loved it and thought that our meal was three-star quality. The inventiveness was always successful, which is unusual. To see more try . The ambiance and service were very good also.

We had a very good soba/tempura lunch at Sakura Restaurant in Bikan Chiku. A good lunch is also available at the Ryokan Kurashiki, but we were happily staying there and enjoying their breakfasts and dinners.

For two relatively new, good restaurants, I would add Poséidon and Jan. Le Chantecler had a very good pre-Xmas menu last year.

Nice, France lunch after airport arrival

Paloma beach is a good suggestion, but getting there etc may be too much in your jetlagged condition and you could save it for another day. It somewhat depends on where your hotel is. If it is close to the center of St-Jean, you could walk to the port where there are several restaurants along the front serving cuisine typical of the region; they're not great, but it would be a good start.

Sant Pau is a great restaurant and worth spending an evening. We stayed in Calella, a beach resort a short drive north. It has several good hotels.

Atera - Really??

"Unfortunately, the vast majority of the many dishes we had were creatively and artistically presented, but rather lacking in flavor. "

A reason we like Atera so much is that the preparations do not rely on a bit of hot pepper in various forms or some acidic saucing to make the flavors seem interesting. Chef Lightner knows how to make the ingredients sing for us without them.

We prefer hotels, but on our trips to Japan, we stay at one ryokan, always for two nights. It would never occur to us that the two dinners and two breakfasts might be repeats and they never are. The last two were Kayotei in Yamanaka and Ryokan Kurashiki in Kurashiki, both wonderful. The next one will be Gora Kadan.
I agree with the sentiments already expressed that you should just relax and let the ryokans be your hosts.

TBD - any good?

TBD is noisy and smoky with some very good dishes and some not so good. Go there for a fun, informal evening, not an anniversary dinner.

Tempura: best beverage and appropriate etiquette?

Definitely with chopsticks as you want to eat the tempura hot. At good tempura counters you will be given instructions how to eat, particularly whether to dip in the salt, the ponzu or not at all. Assuming you do not speak Japanese these will be by pointing. The chefs want you to do it right and are happy to be as helpful as they can, assuming that you are smiling and receptive.. After the regular offerings, they may show you a tray with optional ingredients for your choice.
I always drink sake, but there is frequently a house Chablis, or something like that on offer. To me that would be better than beer, but you will see others drinking beer.
