For two relatively new, good restaurants, I would add Poséidon and Jan. Le Chantecler had a very good pre-Xmas menu last year.

Nice, France lunch after airport arrival

Paloma beach is a good suggestion, but getting there etc may be too much in your jetlagged condition and you could save it for another day. It somewhat depends on where your hotel is. If it is close to the center of St-Jean, you could walk to the port where there are several restaurants along the front serving cuisine typical of the region; they're not great, but it would be a good start.

Sant Pau for dinner, where to stay?

Sant Pau is a great restaurant and worth spending an evening. We stayed in Calella, a beach resort a short drive north. It has several good hotels.

Atera - Really??

"Unfortunately, the vast majority of the many dishes we had were creatively and artistically presented, but rather lacking in flavor. "

A reason we like Atera so much is that the preparations do not rely on a bit of hot pepper in various forms or some acidic saucing to make the flavors seem interesting. Chef Lightner knows how to make the ingredients sing for us without them.

We prefer hotels, but on our trips to Japan, we stay at one ryokan, always for two nights. It would never occur to us that the two dinners and two breakfasts might be repeats and they never are. The last two were Kayotei in Yamanaka and Ryokan Kurashiki in Kurashiki, both wonderful. The next one will be Gora Kadan.
I agree with the sentiments already expressed that you should just relax and let the ryokans be your hosts.

TBD - any good?

TBD is noisy and smoky with some very good dishes and some not so good. Go there for a fun, informal evening, not an anniversary dinner.

Tempura: best beverage and appropriate etiquette?

Definitely with chopsticks as you want to eat the tempura hot. At good tempura counters you will be given instructions how to eat, particularly whether to dip in the salt, the ponzu or not at all. Assuming you do not speak Japanese these will be by pointing. The chefs want you to do it right and are happy to be as helpful as they can, assuming that you are smiling and receptive.. After the regular offerings, they may show you a tray with optional ingredients for your choice.
I always drink sake, but there is frequently a house Chablis, or something like that on offer. To me that would be better than beer, but you will see others drinking beer.

Le Petit Nice is the best fish and seafood restaurant anywhere. The big menu is a four hour extravaganza which is wonderful.

I have wanted to go there, but we cannot sit in a traditional tatami room. Are there possibilities of tatami with a leg well or of tables with chairs?

We loved Hana Kitcho where we had a private room with a table and chairs.

Yes, when I was in the Clinique St George in NIce, the enterprise that prepared the quite good food also did meals for schools (and the prison.)

Jan, Nice

We had a six course tasting menu. The scallops with parsley sauce etc were superb. The Guinea Hen with chestnut purée was very good. The Caramel dessert was excellent. Other courses were all good. My blogpost will come up next Tuesday.

Nice is blessed with quite a few small restaurants with young chefs in the one-star Michelin category, whether they have received the star or not. A new one, Jan, opened a month ago. We went for dinner last night and enjoyed it a lot. The restaurant is named after its South African chef. It is on the west end of the Rue Lascaris, two blocks north of the Old Port, where you can park by the staircase at the north end of its parking lot.

NICE Best spots for...

Go to Espuno, Le Four à Bois, at 35 Rue Droite in Old Nice. Their breads are excellent. They have very good, authentic pissaladère and both sucré and salée tourte de blettes, among other good things. They also have a stand in the Cours Saleya, but going to the bakery is the real experience.

Cassis, or nearby, before the Luberon -- recommendations, please?

We are just back from a night at the Hôtel du Castellet. We bought the Séjour Gastronomique, which includes the room, hotel facilities, the tasting menu with wine pairings and breakfast. It looks expensive, but is worth it. The meal was superb. (The hotel was calm as there was no event at the racetrack next door; I would avoid it if there is unless you are a fan.)

Wild rice. Very American. You would have to cook it for them. It would go well with a porkchop, or something cooked with maple syrup.
