My mole needs help

I am making a mole for a staff party and it is flat. I used a high quality spice mix that has always worked for me before, but something is missing. This is a red mole, and I have added extra Mexican chocolate, cinnamon, and almonds. It has yams, rainbow chard, various squashes, and fennel.

Any suggestions? It is spicy enough, it just lacks depth.

Help - Mushroom soup bitter

I am making my favorite Hungarian Mushroom soup based on a recipe from the Old Wive's Tale in PDX. I always use part fresh and part dried mushrooms. I get a mix of dried from my local health food store and have never had problem. Tonight, however, the soup is really bitter, almost inedible.

Any suggestions on how to salvage a large pot of mushroom soup?

HELP - meringue disaster

I think I have salvaged the curd by adding cranberries, all of which I stirred into whipped cream. We now have blood orange - cranberry mousse with hazelnut meringue crumble. Thanks!

THis was the dessert that was never meant to be. The final blow is that I left the meringues in the oven to dry, then turned on the oven and burned the bottoms. The original concept was hazelnut meringue torte with blood orange curd. The curd it too sweet and now the meringue is in pieces. Any suggestions on how to salvage this dessert - quickly?

I remember the canned beans having a horrible consistency - somewhere between wax and much. The lard was for making donuts. Cinnamon toast and noodle soup were constants.

Homemade "Greek" Yogurt

I love Greek yogurt and fruit for breakfast, but got tired of paying for high priced smooth, creamy Fage. So not I make my own.

I take a quart of fat free plain yogurt and drain it in a cheesecloth lined strainer. Put the strainer over a bowl and put in the refrigerator overnight.

In the morning, it is ready to use. I like combining it with a sweetener and fresh grated ginger before putting in to fruit. Sometimes I use a flavored stevia extract, english toffee is my current favorite, and drizzle a little over the yogurt and fruit.
