Why Doesn't San Francisco Have Better Sushi?

Too many non-Japanese, non-traditional sushi chefs. Majority of people don't want to spend too much money, so gimmicky rolls predominate in many places. The last truly good sushi place was Kabuto, when Sachio owned it. The man was innovative to say the least.

I like my Zassenhaus mills. The small one is easier to handle and use it for white pepper only. The large is easy to use if you hold the handle and twist the body instead of vice versa. I use it for a blend of tellicherry, pink and white peppercorns.

The Best Oyster Experience: Tomales Bay or Hog Island?

Neither one. Save time and gas and money by buying your oysters at Basa Seafood on 24th St. in SF. They usually have a number of types, including Fanny Bays and other West Coast varieties, which I think are superior to dinky little Sweetwaters and Kumamotos. I don't care what anyone sez, oysters aren't that good in the summertime. The oyster companies will tell you otherwise, because they want you to buy their product year round!

If you artisanal pasta, you'll notice it has a rough exterior. This is because it is extruded through bronze, not Teflon, like cheaper pasta.
